Madam:- Rice flour has very high glycemic index. Would it not tend to spike the glucose level? Although fibers of Millets would neutralize the effect but overall result may not affect the glucose level. Please throw light on to our apprehensions.
Sorry for the delayed response Asif, you are right in that both rice flour and millets are carbs and will both spike your sugar levels. But I am diabetic and I have clearly noticed the lowering of sugar levels with millets ( again not all millets) like Bajra when compared to rice alone. This recipe is very similar to Rava dose recipe but is a great option for gluten free diet. If you use Rava instead of Bajra, you can bring the glycemic index down. Hope that answered your query
@@SavisPalate Millets in general are proved to possess low Glycemic index, 54 to 68 whereas, GI of untreated and treated rice flour was found to be 88.0 ± 0.2 and 46.1 ± 0.2, respectively. Though treated rice cream has been developed by Italy i.e a glutten free product [ just for sharing information only, u might be knowing it]. As advised, Rava is a good choice. I have added oil only while making the dosa. This you can modify and You can certainly put less oil if you want. As I mentioned I use olive oil which is one of the healthiest oil available.

@@SavisPalate Precisely true Olive Oil is the first best choice it may be used in lowering the GI while eating Potatoes. Second best oil, i think, is natural Srson (Mustard) oil.
