If I am not mistaken the part at 2:11 where you mention the camera steady - then going into a handheld look after the reveal for Knives Out was actually a happy accident. The steadicam they were using broke during the shot I believe, so they brought the camera off to a more shoulder rig/handheld feel resulting in this take that made it in the edit. So not necessarily a pre-determined director choice.
