The girl who takes Yarei's place in the original adaptation, Chloe, is a creation of the original anime. They mainly did that to create a love rival for Holo in the first arc.
I think the point of her being rescued so easily offscreen is to further establish that the trading companies are a Big Deal. Lawrence is a tiny little fish in a big pond and is in way over his head here. Medio Trade Company decides to kidnap Holo, they get dozens of guys and swarm them and they get her. And Lawrence is helpless to stop them. He can't do anything himself other than leverage his connection to Milone Trade Company, and then once he convinces them they pull strings and get dozens of guys in an elaborate heist and then poof she's back. They're effectively merchant wizards, wielding powers beyond his comprehension by the sheer scale of their enterprise and money. We don't get to see it because Lawrence doesn't get to see it. People pulled strings and it happened, and he's not in control.
Years ago I heard someone say that Holo was embarrassed because she had assumed the person saving her was Lawrence and jumped into his arms (or something to that effect). I'm not sure if that was from the light novel or just someone's headcanon explanation, but it makes sense to me.
It is quite clear to assume that is what happened! In the novel it was a little bit more evident. I think it was a bit more easier to guess that’s what happened in the Japanese dub, too.
From my recollection, the light novel has a bit of Lawerence speculating she did something foolish (hugging her rescuer) and was trying to cover up her embarrassment by acting like he should've rushed in like a knight, something she was well aware he wouldn't do. That's why he glosses over her words asks about her safety rather than getting into an argument with her, like they do when they usually butt heads.
The original anime sold the tension a bit better to me, but I prefer the remake's decision to stick with Yarei, since the weird romantic subplot between her and Lawrence did not really click for me. Other than that, the original has felt better overall to me than the remake, but I guess both have their strengths. Thanks for reacting to this series by the way! It is one of my favorites.
Yeah... As much as I liked the romantic rival subplot... In the end of it all, it felt shallow and didn't really add to the story... Whilst keeping it to Yarei's hate and pettiness that they are now "free" of Holo's influence with their livelihood hits a bit deeper...
You're correct. SOS have a habit of inferring things from minor details and then just internalizing that as canon. And a decent chunk of time they're astoundingly good at it and figure things out way before I would think reasonable. But sometimes it misfires and they just wholeheartedly believe false things, based on minor details. Dude threatened to tell the church, then they see him with thugs in fancy clothes: therefore those are church people. It's not an entirely unreasonable inference, even though it's wrong.
Their impression about Holo is going in a weird direction, Hmm… Can anyone correct them? Holo was just extremely embarrassed because she said or did things to the rescuer thinking it was Lawrence, and taking out that frustration on him. She isn’t romantic to the degree they are thinking.
The show at this point left out that bit, maybe they'll add it back in a future episode as a flashback, but right now the show isn't providing the context.

I'm also pretty sure that the manga adaptation actually shows it too

Kinda funny seeing the bros bein' so confident they know what's going to happend only to be proven wrong, more than once too.
Holo was so darn adorably cute in the back of the wagon.
Weren't the guys with Yarei not just people from the other traiding company and not from the church, or do I misremember something?

Monogatari?
