Greek Walnut Cake (Egg-Free, Dairy-Free) Vegan & Perfect for Lent!

Ingredients
The Dry Ingredients:
3 cups (400g) all-purpose flour
2 tablespoons baking powder
zest of an orange
2 teaspoons ground cinnamon
1 cup (160g) ground walnuts
The Wet Ingredients:
1 and 1/3 cup (330ml) light olive oil
Flax egg: 4 tablespoons ground flax seeds plus 1/2 cup (125 ml) water
1 and 1/3 cup orange juice
1 cup (220g) granulated sugar
1/2 teaspoon baking soda
1 teaspoon pure vanilla extract
Garnish:
confectioner's sugar
Sweetened shredded coconut
Instructions
Preheat the oven to 350 °F, 180 °C.
Make the "flax egg" by combining the flax seeds and water in a small bowl. Set aside.
Combine the dry ingredients in a mixing bowl and whisk together. Zest the orange prior to juicing.
In a large mixing bowl, combine the oil, sugar, vanilla extract, flax egg, and whisk together.
Add the baking soda to the orange juice and mix. It will rise so, do this over the wet ingredients. Add to the bowl and whisk together.
Add the dry ingredients in a few batches and whisk until just combined.
If the batter is too thick, add a quarter cup of water.
Grease a 9 by 13-inch baking pan with olive oil and transfer the batter to the prepared pan.
Bake on the center rack for about 35 minutes or until springy to the touch. A toothpick inserted in the center of the cake should come out clean.
Cool completely and dust with confectioner's sugar.
Serve with Greek coffee. Kali Orexi!
Notes
A can (425g) of pure pumpkin puree can be used as an egg substitute in place of the flax-egg.
Store the cake in an air-tight container or covered tightly in plastic wrap so taht it does not become dry.

I made this today and it was amazing. I made cardamom syrup to drizzle over the cake also. Mine needed about 45 mins to bake but I think it's because I used a smaller deeper dish. It was a hit at our family lunch today 😊

how do you make it? first the water and sugar, and then add the cardamom? or first the water and cardamom, and then add sugar?
@@irinadalah9089 1 cup each of water and sugar, a tablespoon of cardamom pods at the same time. Bring to a boil then lower heat and simmer for 20 mins or until it has reduced by a third and you have thick syrup. It will thicken more when it cools. Let it steep overnight to infuse the flavour. Remove the pods before you use it.

I tried it a few times, at least three of which I used regular eggs (4 M) - and it comes out a winner every time!
I tried it with pumpkin seeds first time - we all lack iron, so we eat a lot of those seeds. it was awesome!
then I tried with: candied orange and lemon peel (which I make myself, at home), small bits of colored rahat locum (which was classic for my romanian childhood), added chopped walnuts, and sliced almonds - they all worked wonderfully! the only thing that didn't work was chocolate covered coffee beans
I also used all kinds of spice mixes instead of only cinnamon, including cardamom and allspice, and they all worked.
I'm going to try it now with no spices and no added dried fruits - I will only add a few drops of rose extract
Thank you so much for this video; this cake is perfect, not too sweet. I made this gluten free by subbing King Arthur's Measure for Measure. I'm not vegan, but I really prefer baking with flax eggs. First, it's cheaper, but, more importantly, the cakes never seem to form that dome. They rise evenly with a flat surface. I also added some cloves and a pinch of anise. Thank you again.

You are so right! My grandmother said she had no recipe, a standard Jewish measure is a Yartzeit (memorial) candle glass. They light a candle for the dead on the anniversary of the persons death. Every older Jewish grandmother had at least 10 of the glasses in their cabinet. Even with eggs, different size eggs, produce different cakes.

wow Dimitra the cake is delicious went down a storm with my boys and husband! i aded 30g more sugar and used chia as the egg but also added the flax. Moist delicious easy on the stomach and packed with protein. I also used rice flour and tapioca flour instead as we’re Gluten Free 👏👏👏👏👏🙏🙌💜😻👍

Thank you for this great recipe. I have found that some types of tangerines can have very bitter zest, not equivalent to oranges at all. I do not recommend them, unless you have tried that variety before. I recommend just organic orange, zested.

Great recipe. Would you consider setting the focus on your camera to *manual* so that the autofocus will stop seeking and going wildly out of focus? You can then simply set-and-forget the focus before each scene; much better!

Daily flax (chia and hempseed)with your oat porridge. Can you replaced the oil with apple sauce and the sugar with( Less monk fruit or coconut) will gluten free flour work🤔 Baking paper please if Plantbased try to avoid OIL. cinnamon any time for me.

It is more of a orange cake rather than walnut, which I don't like in baking. If orange juice is not added, it must be entirely walnut
I Stay Low on the SUGAR side..... For Pre-diabete,..... everything else is okay
I wouldn't ever use that much oil in a recipe, that's over the top, very unhealthy.. especially "light" olive oil which is altered oil. You might try reworking this with some applesauce in place of a lot of the oil. Also wheat flour is nasty as well, try using spelt (not hybridized into oblivion), which has far less gluten.
