My Family's Cuban Picadillo Recipe!

INGREDIENTS
1-1.3 lbs Lean Ground beef (92-93% lean)
0.75-1 whole bell pepper (green or red)
1 medium white onion
6-8 cloves of garlic, depending on size
8 oz of tomato sauce
1/2 cup manzanilla olives (including the brine)
1/2 cup raisins
1.5 tsp ground oregano
1 tsp ground cumin
salt
DIRECTIONS
1. In a medium pot over medium heat, add olive oil and allow it to heat up.
2. Dice the onion, peppers, and the garlic (or optionally, use a garlic press on the garlic).
3. Add the peppers and the onions to the pot - it should sizzle. Add some salt and sweat the onions (~5 minutes).
4. Add the garlic, mix, and let sit for 2-3 minutes or until fragrant.
5. Add the meat directly into the pot. Add salt, oregano, and cumin. Mix to loosely incorporate the spices and the meat.
6. After the meat has browned a bit (~5 mins), add the tomato sauce, raisins, and olives. Mix and allow to cook for at least another 10 minutes.
7. Once the meat is an even brown color, it's ready to plate! You can let the meat simmer on low for longer, which will improve the flavor!

I first had this about 10 years ago at a Cuban restaurant in Boca Raton, though I suspect they didn't go with lean ground beef, as it was swimming in grease. Still, super yummy. Another winner, Dennis!
Yeah - anything less than lean ends up with a grease pool that looks like a toxic lithium dump lol
This is my second time, cooking this recipe, included the olives and raisins, simmering on the stove now (3/19/2023). First time, didn't include them. Thank you. 😊

Wow, I just made this tonight and this dish is incredible. Keto friends, don't be afraid of the raisins cause the flavor it adds is worth the carbs divided by multiple servings. I reduced to 1/4 c raisins just to keep it close to original recipe and so glad I did!

I didn't have manzanilla olives but I had half a jar of olive tapenade left over from new year's eve. It had olives capers and anchovies. I double the amount of raisins to make up for the brineyness of the tapenade and it was DELICIOUS!!!

Almost identical to our picadillo in northern Mexico. The biggest difference is that we add potatoes. Yummy holiday dish.
Im sure it spawned from the Spaniards, so it makes sense! I think Puerto Ricans add potatoes as well!

Just ate this tonight! Wife being half cuban means that picadillo is a must in our meal rotation. We throw in capers because we love brine-y things and don't often do peppers because Kalie doesn't like the taste of them in dish but I do like your traditional recipe here. - Josh

Thanks for the recipe Dennis! I Tried this today, only to discover I had no tomato sauce. I substituted Rotel diced tomatoes with green chili and chipotle. The result was "off the charts"! I did omit the raisins as I am low carb. Manzanilla olives are my go to salty snack. If there are any leftovers, Empanadas are next up! I know, they are not "low carb", but everyone has a weakness. Empanadas are mine...Thanks again. Love your channel.

You can omit the raisins and add a tsp of sweetener. It will still be really really good!

Hi there, I came here after watching a preview of your Cuban Kitchen on Create, I can't wait to watch it. Congrats on winning 2nd place. I also would like to ask you is there any particular reason you are using a sauce pan and not a skillet? I'd also like to add my mother had taught me to add capers along with the olives it's brine and raisins, and for those who don't like the chunky bits of olives & raisins etc we pulse them along into a paste with the brine & sofrito and no one is the wiser, and the flavor is all there.
We always cook it in a larger pot, and using that induction stovetop limits which pans/pots I can use :/

I like to add white vinegar.. gives it a spicy sour taste..also substitute ketchup for tomato paste.. more kids friendly.. for Fancy add garnish of fresh cilantro 🎉🎉

I grew up on that minus the rasins. The way it's traditionally served is what got me where I am with my A1c today; I digress. It was so yummy.... How can you show us to it make the relleno de papa sin la papa? I already got the enpandilla down. I use the cut da carb flarbreads.

The papa rellenas - im still working on - those were DEFINITELY not low-carb, but the video was for a contest, so I wanted to document and share the recipe! But i agree - i too grew up eating picadillo with all sorts of high carb sides: rice, beans, and yuca 🤦♂️

@@BlackTieKitchen When I lived in Bolivia relleno de yuca were my favourite, along with saltenas and empanadas de queso which were a deep fried empanada with queso crillo sprinkled with powdered sugar. Haven't quite figured out how to ketofy those yet

Quick and to the point. Like this recipe should also be. And if you're not a fan of olives, as one commenter has already said, you could use capers. Use what you have. I would like the sweetness of the raisins, but chopped prunes would also be fine. Again. Make it your own.
Or just add a tsp of your low carb sweetener instead of the raisins!

Glad to see your videos on my feed again! I can't believe I missed this one! You mention using leaner meat bc it would be too greasy otherwise. If you don't have access to, or only have a higher fat content on hand. A bit of flour or starch should make it go from greasy to gravy.
Now that being said, you're normally keto friendly, so this isn't really the best suggestion here. But I have seen using Xanthan gum as a gravy thickener.
Yeah. You can also scoop out some of the grease - its just more work!

My mother in law ( from cuba) didn't use green pepper or raisins...she taught me how to make Piccadilo I just add my touch .

Most cultures have a variation of this dish - especially cultures that had heavy Spanish influence!
