Even if the defenders can stop the orbital landing, they'll be constantly harrased by the forces hiding in the tunnels waiting for opportunities in the future. Just like the zerg, even if they can't invade outright they can plant some vanguard forces that'll soften the defense for future invasions. Orks operate in a similar way, if enough spores are spread, orks incursions on the planets will be a chronic problem.

If I'm not mistaken, the Hive Swarms have been designated names like Behemoth or Leviathon and are coming in at different angles to consume the Milky Way. They have in all likelyhood consumed other galaxies, combining the traits of billions of lifeforms to create the feral or formidable forms we see now.

My favourite theory about the Tyranids is that they are...
    A C'tan from another galaxy :)
    Supporting this:
    1) C'tans are reality-bound, manifestations of material laws. Which means, there are most likely Ctans everywhere there are stars to eat, and they may very well be "regional" incarnations, meaning there is a Nightbringer, a Void Dragon, in every galaxy.
    2) One of the C'tans in the Milky Way was called "The Endless Swarm" (citing the Necron Codex, 9th edition). No more info on him. But... yeah. Endless. Swarm. :DDD
    3) C'tans in their primordial form (... gas-like "presence"?) can invade specific kinds of materials that are able to contain them. We only know of the Necrodermis, that is super-tailored and engineered for them, but they could very well be able to invade other type of materials that are adaptable and transformable. Like for example organic matter with mutable genetic material and nervous systems :p
    4) Even after their incarnation, C'tans are mostly defined by: greed, gluttony, relentlessness, cruelty, unfathomable, madening, cosmic intelligence and knowledge. Sounds familiar? :)
Considering all that, the theory goes as follow:
    - In another galaxy, another Endless Swarm C'tan came across a breed of super-adaptable creatures, and managed to "fuse" with them. Alternatively, a Necrontyr-equivalent race found the Ctans as well, and created an organic envelop for them, instead of a metallic one.
    - Because of his nature, the Endless Swarm became the most powerful when using an organic vessel, and dominated the galaxy by creating the first "drafts" of Tyranids, becoming the Hive Mind. Though having no presence in the warp at first, the sheer number of "soulless" but still living, sentient creatures he was controlling had the effect of creating this Shadow in the Warp. In this theory, the Shadow is actually just the presence in the Warp of a Ctan that gained sentience through organic vessels, rather than inorganic ones.
    - The Endless Swarm continued to replicate endlessly, devouring everything out of greed and gluttony. Eventually, his numbers became so vast that his own mind split into different individual Hive Minds, and they went on their own ways to keep devouring. Some left the galaxy to find other sources of food, the competition becoming too great, or the ressources too scarce.
    - The different Hive Minds slowly approached the Milky Way. The Silent King was around, and encountered them. He recognized the behaviour of the Endless Swarm, that he vanquished during the War in Heavens, and realized a new incarnation of this C'tan was headed towards the Galaxy.
That's why he freaked out. He knows what the Tyranids are. He knows that the only thing that can and WILL completely annihilate everything and everyone, just for the sake of it, are C'tans. C'tans are the ultimate ennemies of everything, and the most evil, destructive forces in the universe that we know of. Szarekh did not really get involved with Chaos that much, he didnt see it as a real threat to his plans, but rather a temporary, self-destructive phenomenon. I don't see anything else that could make him want to ally with other races than the arrival of a new, fully capable, apocalyptic incarnation of a C'tan.
    I rest my case! :D

From their point of view they're doing you a favor. They are uplifting the species they come across to a higher form of being.
Once all has been consumed there will be peace. And within them will be all the knowledge and ability of every single individual ever consumed. The gestalt species.
If words are low bandwidth compared to thoughts, then thoughts are low bandwidth as compared to genetic exchange.
My hypothesis is they have an organelle that specializes in virus production. This organelle is programmable through their hive mind. These viruses act like CRISPER, allowing the insertion and subversion of cellular processes. A massive amount of data transfer with incredible compression.
The snippets of code aren't just tools, it represents the thought and will of something that was consumed. The more that is made of it the more it expresses. It's the gestalt that decides what DNA will express when, where, and how.

The choice of name for Hive Fleet Ouroboris being so similar to Ouroboros, suggests a self-referential time loop. This stacks with their lore having them being probably responsible for historic sightings, and the suggestion that some tyranids might intentionally be scattering themselves using the immaterium.

The Tyranids have been leaving behind devastation in their wake thus far, but that could be a strategy rather than a long-term goal. It's quite possible that they have the ability to reconstitute worlds as well, and if they succeeded in wiping out all competition from the galaxy, then it might become more efficient in the long term to invest in doing so. Denial is a strong coping mechanism. Especially given the existential threat the Tyranids present. Reducing them to “bugs” allows one to defer dealing with such an unfathomable and relentless force, preferring to grapple with what can be understood and managed. When “more important” threats are dealt with, then one can look into exterminating the “lesser” pests.

From the names you mentioned, i find "The great Devourer" most apt, since it acknowledges something the others dont, and something most species in the milky way dont realize: The tyranids are not really a species, they are one entity. The swarms and fleets are its body, the hivemind its, well, mind. And so, to look upon individual battles, even campaigns, looking for displays of the hiveminds full potential is doing it a disservice, and demonstrating ignorance. Think of what your body can do without your conscious intervention. The heart beats, you breathe, your guts digest and your immune system develops new weapons to fight infection, all without your conscious thought or even awareness. Now, when you feel hungry and you plan to get some food, what do you put the most thought into? Chewing it? Digesting it? No. The only thing that really requires your attention is getting your hands on it in the first place. Does the hivemind percieve what it does as a hunt? Is it akin to a hunter stalking prey, at some risk to himself, or is the tyranids invasion of the galaxy, its overwhelming of planetary defenses and consumption of civilizations, akin to one of us walking up to a blackberry bush and popping a few of the fruits into our mouth? Is the destruction of individual hivefleets really a massive setback, or is it like pricking your finger on a thorn, painful, maybe worthy of a momentary flash of rage or frustration, but forgotten about within moments and ultimately irrelevant? Is the universe a dark forest stalked through by a hunter, or an orchard being harvested, with the one harvesting moving from one galaxy to another, waiting for the ones it has harvested already to grow back their fruit?
