  • *Kofta Recipe (Spiced Meatballs)*
    *Ingredients:*
    - 500g ground meat (beef, lamb, or chicken)
    - 1 small onion, finely chopped
    - 2-3 cloves garlic, minced
    - 1-inch piece ginger, minced
    - 2 green chilies, chopped (optional)
    - 1/4 cup fresh coriander leaves, chopped
    - 1/4 cup breadcrumbs (or gram flour)
    - 1 egg (for binding)
    - 1 tsp cumin powder
    - 1 tsp coriander powder
    - 1/2 tsp garam masala
    - 1/2 tsp chili powder (adjust to taste)
    - Salt to taste
    - Oil for frying
    *For the gravy:*
    - 1 onion, finely sliced
    - 2 tomatoes, pureed
    - 2 tbsp yogurt
    - 1 tsp cumin seeds
    - 1 tsp coriander powder
    - 1/2 tsp turmeric
    - 1/2 tsp garam masala
    - 1/2 tsp red chili powder
    - 1 tsp ginger-garlic paste
    - Salt to taste
    - Fresh coriander leaves for garnish
    - 2 tbsp oil
    *Instructions:*
    *1. Prepare the Koftas:*
    - In a bowl, combine the ground meat, chopped onion, garlic, ginger, green chilies, coriander leaves, breadcrumbs, egg, and spices (cumin, coriander, garam masala, chili powder, and salt).
    - Mix well to form a dough-like consistency.
    - Shape the mixture into small balls (koftas) and set them aside.
    *2. Fry the Koftas:*
    - Heat oil in a frying pan over medium heat.
    - Fry the koftas until they are golden brown on all sides.
    - Once fried, set them on a paper towel to drain excess oil.
    *3. Prepare the Gravy:*
    - In a large pan, heat oil and add cumin seeds. Let them splutter.
    - Add sliced onions and cook until golden brown.
    - Add ginger-garlic paste and sauté until fragrant.
    - Stir in tomato puree and cook for a few minutes until the oil separates.
    - Add yogurt, turmeric, coriander powder, red chili powder, and salt. Cook for 5-7 minutes, stirring occasionally.
    - Once the gravy thickens, add a little water if needed to adjust consistency.
    *4. Combine and Cook:*
    - Gently add the fried koftas to the gravy.
    - Simmer on low heat for about 10-15 minutes to allow the koftas to absorb the flavors.
    - Finish with garam masala and garnish with fresh coriander leaves.
    *5. Serve:*
    - Serve the kofta curry hot with naan, roti, or steamed rice. Enjoy!
