Looks very appealing.You don't stir rice like Banku that's why your rice always look broken and not single grained.You lift and turn all the sides. If you had taken your time for the jollof to cook on low heat, the fluid in the vegetables would have cooked it completely without necessary water. You should always add the water into the stew and not when rice is cooked halfway
Suggestion: Consider removing as much animal fat as possible, and use olive oil, or avocado oil instead of vegetable oil or palm oil. You will greatly feel a difference, and reduce cholesterol. Boil your meat for a few minutes (5 to 10 minutes) to eliminate animal fat. Rinse and return to a clean pot and add your blended vegetables to steam the fat free meat. Consider using Pink Himalayan Salt instead of table salt or Kosher, more nutrient and less sodium that causes fluid in the body.
