    Wow! Deck ovens are REALLY expensive in the US! We live in India, and we get amazing deck ovens that can be configured to run on electricity or LPG for as low as $800 USD (60,000 INR approx.)! A rotary rack oven here costs around $2000 USD for a 12 rack unit that can be configured to run on multiple fuel sources like electricity, LPG, Diesel, or even firewood. Great content btw... very informative! :)

      @@LoveLevain haha you can check out ruclips.net/user/hindchef - they are based in New Delhi (India's capital) and they do export globally if I'm not wrong. Most of their channel content is in hindi, but I'm pretty sure they will have folks who speak english as well if you ever place an enquiry with them. I recently consulted with them about a deck oven, but they really wanted to sell me their rotary rack oven, but i'm not ready for such a large setup! Like you, I am looking to set up a micro-bakery first before choosing to expand to a larger production line. These folks help setup LARGE industrial bakery lines that can generate as much as 5000kg produce a day! I'm looking to hit a max of 50 to 80 kilos a day to begin with! (that's roughly 120 to 200 loaves of sourdough bread a day.

    Great information.... Question ...Does ABS offer a single phase deck oven? or are you going to have to have 3 phase installed for it?

      Oh most definitely they offer a single phase option, that's what all residential have and that's what I'm ordering. The only way to use 3-phase equipment in a residential environment is if you use something like a rotary phase converter, which is not recommended if you have an alternative. One of the key reasons I went with ABS was because they offer the oven in single phase.

    Great info and thanks for all the insights! I am looking now at a two deck oven from POLIN, which is italian. What is your feedback on this oven? and eventually, I need to install a hood that comes out of the roof by 8 meters long, is this efficient enough to extract the heat or CO2 and does it smell? I appreciate your input on this.

    What if you baked bread in a pizza oven?would that work? You would only have to add steam Which you can by putting some some lave stones inside.

      Oh absolutely you could use a pizza oven to bake bread. Some even come with steam like "PizzaMaster" ovens. But due to non-compete clauses, you can't get steam on all decks for PizzaMaster. One deck has to be without steam They also typically don't come with proofing cabinets built in. Sometimes the deck itself might have a lower ceiling height which is perfect for pizza but not so much for a big rising loaf of bread.
      Since the cost is comparable, most people who primarily bake bread use a dedicated traditional deck oven. Then you can use it for everything including pizza.

I'm in Canada,so I am not sure if I can get a Pizza master oven,without breaking the bank.Most pizza ovens that I see for sale in Canada are a lot cheaper than than hearth bread oven.We also don't have many options like you do in the U.S.A.So if I where to get a Pizza oven for bread,what type of specifications would I be looking for or need?Thanks

    Heya dude. If you haven't had to decide yet I would push you to try an Axis (made in Italy) steam injected electronic controlled reversible fan convection oven. I bake 60 lbs a week sourdough only at home and have a 9 year old son full time. Will post a video I'd you want me to. Promise.you this blows away deck oven in every way possible.

      From on to loading loaves, 1 hour.

    I have been told that manufacturers will not honor warranties if commercial oven is installed in a residence. Also that oft me can mess up your homeowners insurance. What are your thoughts or discoveries?

      Great point Steve and I have seen that listed on some websites, specifically Webstaurant. They even charge you more on shipping items to a residence as opposed to a business. My experience with this has been that as long as the service required is not obscenely complicated or expensive, they will honor their warranty and not ask questions. If you look on my blog (wheatbeat.com/hobart-n50-mixer-review/), towards the end I talk about my service experience with Hobart. They came to my house multiple times and did required work for free and they knew up-front when I called for service that it was a residence. No problem for them at all. So I think it depends on the manufacturer more than anything else. They also realize that some folks may do professional baking from their home so they need to be careful about what they consider "residential use". When you're buying a $15,000 oven, I would guess they assume it's not going to be used by amateurs; therefore, I don't think they would hesitate to honor their warranty even if it was technically installed in a house. As far as homeowner's insurance, I have not really looked into that (maybe I should) but if you want the expensive equipment to be covered for theft/damage/breakage/etc then you would ask them to add it to the policy like you would if you had a lot of jewelry, guns, or other things that not everyone has in their home.
