      Glad we can help! The right kind of oven really depends on your overall baking needs. We generally learn more about the client's overall baking needs and align them with an oven that can best suit your overall production.
      Generally speaking, if baking cheesecake in a convection oven, you would want to control your fans as much as possible to avoid over browning on top, whereas if baking in a deck oven, you would want to ensure the cheesecakes are baked in a water bath.
