Hi i would like to say my recipe for the sauce ! It is easier and convenient! What you'll need *fish sauce (salty) *small peppers (small ones are spicy) *salt *black pepper *cilantro First, put your fish sauce in a bowl and salt and black pepper and mix slowly. Second, wash your peppers you need small peppers so the spice is gonna pop out. Third get your peppers cut them into small pieces so the flakes can come out. Fourth, mush your mix for two minutes. Fifth, top it with your cilantro! And your done! Then cut your mango like this. Cut the top and bottom. Then cut it like a + then you can peel it easily. Optional Once you've peeled it you can cut little squares to make a design.
As much as I cooked, I can’t never seem to be the kind that always make sure to have my ingredients stocked up. Especially, these two essential ingredients in Lao cooking. Haha
The ingredients used in the video are the following: •Roasted/blended Thai dried chili peppers •Roasted/blended glutinous/sticky rice •MSG (optional) •sugar •fish sauce •Thai fermented fish sauce (The dark sauce is my own mixing of fermented fish sauce. You can find Thai fermented fish sauce at Asian markets. The sauce have strong smells and can be too much for those that never had that before. If this is your first making this sauce I’d leave this out and just add fish sauce) •sliced shallot
Molina Vang you can add just fish sauce it’s as good. Sometimes, I don’t have brown sauce or fermented fish sauce I just used fish sauce to substitute it.
Onh Southy The brown sauce that I’ve used in the video is fermented fish sauce/padak that I mix and brawl myself. I made it for papaya salad or making sauce.
Bet you 10 bucks the Knorr or some kind of seasoning in your cabinet has msg. Or snacks like Boy Bawang, or Hot Cheetos, they have msg. "Flavour Enhancer (E621)" on the ingredient lable? You guessed it, just a fancy way of saying msg. MSG is not harmful.

But it doesn't have the fishy umami with the roasted rice taste. The original recipe is much better in my opinion.
