I used to work for J&J in the UK making Cidex for use in sterilising medical instruments that could be used in autoclaves. Hideous stuff. We also made surgical swabs for use in operations.
I can't answer your question, however the instruments weren't sterilized at the time she handled them without gloves. In fact, they were only disinfected (by the green liquid that is probably glutaral), which is different from being sterilized. The sterilization per se happens on minute 4:48 when she puts the instruments inside the autoclave

It's hard to do everything how it should be done, step by step with patients in and out and a Dr that wants you to be there all the time. We still do it right. It's interesting to work with a surgeon :D

Restaurants can always hire SPTs with a certification. I dunno if they're willing to pay each SPT almost the same rate as the restaurant manager.

They go into an autoclave after manual cleaning/disinfecting which sterilizes them. Without the autoclave, the tools would not be ready to use.
