- Hello lovelies,
today's recipe is a simple, airy sponge cake Pan di Spagna which is an Italian Sponge Cake. It’s made with only 3 ingredients: eggs, sugar, and flour…no baking powder, no butter, no oil, and no dairy! hope you all like this video.
Ingredients for 15 cm (6 inches) pan:
3 extra eggs or 4 medium - 200g in total
Plain flour or cake flour- 90 grams ( ¾ cup + ¾ tablespoon)
Sugar - 90 grams (1/3 cup + 2 tablespoons)
**CAN BE flavored with vanilla or lemon zest.

What a brilliant recipe. As a diabetic I have to be careful about carb intake...90g of flour, about 65g carb. Substitute the sugar for granulated sweetener... cracked it!!!

My grandma makes this recipe , in our village that is in Kerala we call this cake as khums . Really amazing cake 😋😋. She spreads little ghee in cooker coats well in each every corner and pour this batter to cooker ( remove whistle )and bakes it on stove on low flame by keeping a pan under the cooker …

Best sponge cake with no oil/butter too; most important is to beat the mixture no less than 15 minutes to aerate the batter and make the sponge texture; I also find it important to well grease and flour your cake pan for ease of removal.
