- One of the oldest cultivated plants in the Mediterranean region thrives in the south of Italy: the caper shrub. Apart from its fruit, the flower buds are eaten, too - and they're a real delicacy. The best capers traditionally come from the volcanic island of Pantelleria, south of Sicily. Capers are the flower buds of the caper shrub native to the entire Mediterranean region. They are pickled in salt or oil and fermented for several months. Before sunrise, workers begin harvesting the buds by the light of their work lamps. Later, the flowers might open, at which point they are worthless. Gabriele Lasagni of the traditional caper manufactory "Bonomo & Giglio" is considered the "revolutionary of capers", because he transforms the traditional capers into innovative products.

When I was a child, i thought capers were harvested from some sort of algae because they were salty like the sea.

It's incredible how capers plant loves rocks and bricks. In Italy is very common to see it growing in the old walls.
Though not as popular with the masses outside of Italy, capers remain an accessible go-to for the common but more discerning foodie.

They're often paired with fish. Also Capers are not to be confused with Carp.

It grows around rocky mountains in Ladakh India and recently the locals have been foraging them for sale to cafes and restaurants. A new discovery for them

@@AntiBtsArmy18 you could, but it's like eating an untreated olive, very bitter. Capers must be either pickled or exsiccated before being consumed.
@@frafrafrafrafra oh...... You would not imagine how bitter is a bitter gourd, we often boil those up or fry with some potatoes lol but the bitterness will stay at least 20 hours in your mouth. You wouldnt even taste anything else after eating one
My grandma in croatia collects a fistful of capers before going back home from fishing. They taste very well and they grow very fast. They are also wild capers, not grown by people.
By the way, i'm eating them right now from a jar.

In my Country Iran They Grow in Everywhere even in the Wall or In Road's !!! In our language, we call them, the "Stupid Watermelon" or the "snake watermelon"
