    In this Smoked Chicken Recipe, we will teach you how to Smoke Chicken in the Pit barrel Cooker or another Barrel Style Smoker. This Easy Smoked Chicken Recipe is one that is simple to do and tastes great! We made these on the Pit Barrel Cooker, but you can also do this on any other type of grill using the indirect cooking method. Everything you need to know is below.

    INGREDIENTS THAT YOU WILL NEED FOR THIS COOK:
    2 whole chickens (cut in two)
    Oil to rub on chicken before rub
    BBQ Rub of your choice
    Optional BBQ Sauce if desired
    **HOW TO MAKE THIS EASY SMOKED CHICKEN WINGS RECIPE**
    Step #1
    First you are going to take your whole chickens and remove the backbone by either using a bread knife or poultry cutters. Once the Backbone is removed place a thin coating of oil onto the bird then cover them in your favourite bbq rub. You will coat all sides and then let it sit for about 20 minutes while you set up your grill.
    Step #2
    Once you Chicken halves have been seasoned and your grill is set up for cooking at around 275 degrees you will then go ahead and hang your chicken in the barrel and begin cooking for 2 hours. Add in your favourite hardwood to add some extra smoky flavour.
    Step #3
    After about 1.5 hours you chicken is ready to be sauced if you wise to sauce them. Once your chicken has been sauce to your liking place the lid back on and continue cooking for an additional 30 minutes or until your chicken reaches an internal tempreture of 165 degrees.

    I was lucky enough a few years ago to have Noah, the creator of PBC, set up next to me at a contest. I had the chicken, pork, ribs and brisket that he cooked that day. The chicken stood out as my favorite. The PBC is one heckuva chicken cooker! Great Video Jabin!

      GQue BBQ Chicken is the only meat that the PBC shines in cooking. I’m not knocking the PBC but I do have enough experience with one to know
      That chickens are the PBC’s specialty.

    Excellent cook, going to try this in my UDS sometime soon, been dying to my a video hanging chicken halves in the UDS to see if I can get it to work like the pit barrel. Great video

    Jamie I love all your PBC videos. I really appreciated your suggestion on how much charcoal to use. I thought a whole basket would be a waste. Used a overflowing Webber mini chimney unlit and a just under full chimney and everything turned out right.

    easyist way to cut a chicken is a quality pair of kitchen shears ...that seperate and are dishwasher safe

    hey how do you make sure the skin isn't rubbery? Every time I cook chicken on the PBC I get rubbery skin instead of bite through

    Which one did you like better, the coffee rubbed chicken, or the sweet & Spicy rubbed chicken? I haven't used a coffee rub on poultry before.

      They both were really good, but I think If i was to pick one I would say the coffee rub... My kids would have said the sweeter one. a Coffee rub goes good with a lot of meats and is worth trying out for sure.

    How do you measure the temperature in the barrel?

      you don'y really need to as it cooks between 275-300. there is an opening at the bottom that controls airflow based on elevation though.. you set it and forget it. If you really want to see the temp just lower a leave in thermometer down one of the top openings.

    Have you tried chicken with one rod out? Crispy skin without sacrificing juiciness

      I will have to try that out. I haven't tested fully the temps for one rod out, only with both rods out which gave me a temp about 450. What temps have you come up with with only using one bar?

    No juice in those breast I always inject the breast with marinade because they dry out

    Where's the juice? I didn't see any of the alleged juice that you claimed were there when you cut the chicken open. 👎

      It's there for sure.. in fact if you look at the thumbnail you can see it all over the cutting board and in the drip reservoir. cheers.
