- Mary prepares a lighter version of Zeppole or sometimes spelled Zeppolli. A fried dough pastry originating in Naples, Italy and found in many local fairs and Italian festivals. A traditional Neapolitan treat served during various holidays.

Thank you so much for your video. I loved it! You brought tears to my eyes because you reminded me of my Mother and her sister Mary-my Godmother who have passed on. Unfortunately they passed young-I am only 38 and miss both of them terribly. Watching you tonight made me feel sad and happy because I could imagine doing this with them because they lived for cooking! Keep doing this you are excellent at it!

I've made this recipe about 20 times and I love it! VERY EASY to make! I use an ice cream scoop and drop the dough in the oil. I use cinnamon sugar on them and they're fabulous. Nice hot crispy outside and soft middle makes all the adults turn into kids. I want to make this and film it, I hope you do not mind a video response.
I grew up in brooklyn and my grandmother used to make them at the middle or end of summer and use the big yellow flowers, cut into pieces from squash that she was growing in the garden and put those in the dough mix - they were wonderful! Thanks for your video.
I'm going to make these tonight as a treat. I have 3 (non Italian) step kids. They'll love these. I have zucchini flowers in my garden and will add them. My parents both passed last year and your opening comments about your mom's recipe collection reminded me of my mom's. She had written lots down.

Thanks Mary their just like my Mom's use to make also, & we even do some with Baccala or anchovies in them for Christmas eve or day.? when done we put them into a big brown paper bag & add the powder sugar to them & shake the heck out of them in the paper bag.? I was looking for that recipe like my mother used to make. This is it. She was right off the boat from Naples so when in school I had to bring something for international day, she made a huge bowl of zeppoli. My classmates went wild. Thanks for sharing.
WOW!!! Boi what memories I used to get them almost every day on my way home from school in Bklyn on 5th ave and Baltic six for $.50 in a brown bag....hey beautiful I noticed how you hit that glass bowl with your wooden spoon have to be careful that you don’t chip that bowl where glass will go right in your mixture! Hi, Mary. Although I am not Italian myself, Israeli... I fall in love with these fired pastry that I ate in Naples, and in Louisiana. They are equal in deliciousness to Israeli doughnuts for Hanukkah... I made alteration to the recipe, added a little bit of butter or margarine to the dough, my Italian friend told me it would in rich the texture and the flavor.
My Grandmother called hers Sphingi I have not been able to get the dough right till I watched you make it lighter like that! A secret that passed away with gram till now.

Zeppole, a childhood favorite. In Brooklyn, NY you could get them at the mom and pop pizza shops. You could eat them till you got a belly ache. Thank you the memory and excellent easy to follow instructions. Please post more!

Just had to comment on this video-couldn't have found one better done.I too had a Mother who wrote recipes without putting the name of what it was on the paper.I've been reading them out to my Aunt (in NJ) & having her guess what they might be.I'm keeping them,there are few things more precious than a handwritten recipe.Thank you for taking the time to share your Zep technique.

Mary...that zeppole dough is beautiful! They look very light and airy. Most zeppoli I've eaten are heavy greasy balls of dough. Yours are definitely worth making. Thanks for another wonderful video.

Adding a TSP of Sugar to the Yeast & water will help feed the yeast also etc

No, you can use any type of yeast. I am used to using dry yeast but my Mother always used cake yeast. They all work well.
its like kpof kpof Nigerian snacks made the same way except with nutmeg added and no toppings, very delicious!
I love and miss these so much. I haven’t made them in years. I came here for a refresher course. I remember being in Roma and a man telling me that it’s peasant food! Ugh 😡! I don’t care. I love what I love. I too prefer savory. With a bit of fresh parsley in the dough.

My glass measuring cup is a one cup measure. The recipe calls for 1 cup water to 1 or 1/14 cups flour. Thanks for the comment. Love to hear how the recipe comes out.

Put them into a brown Papper Bag, Toss in some Powerd Suger and just shake them up and enjoy Thats the way they are done at the Italian Street Fairs etc.

The Main thing you have to check and make sure of the EXP Date on your Yeast, Before using it or you will have to dump out the whole batch etc.

My German mother would make something like this and served it unsweetened with ham and bean soup. She spooned them out onto a floured table cloth and let them rise individually before frying.
Looks kinda like what they call "funnel cakes" down here in the south. I've heard of these from my mother who is originally from Bensonhurst.

I think that would work great, since we have dizzled honey are them and that works fine. A little dusting of powdered sugar on top of the sauce would be a delicious touch. Happy Holidays.

If you add sugar to the batter it will not taste like an authentic zeppole. You can sweeten after they are cooked by sprinkling powder sugar or dipping in honey.

I don't put sugar in with the flour mixture but I do sprinkle powdered sugar on them after the zeppole are cooked.
My Aunt used to make these but she also made some with anchovies too
Use a slotted spoon when removing zeppole from oil. Also, always drain them on paper towels. My Mom drained them on a doubled brown paper bag. Hope this works better for you. Enjoy!
