at 3:04, when rudder is turned that position looks like stb to me, even when given was port, where does vessel turn? I thought if port turns port. However, now rudder turns stb.

See my friend it's actually tiller is moving stb in the diagram and rudder actually is moving port side at that time. I hope you understand. Thanks for your question.do comment for more topics which you need.

since hydraulic pump is variable delivery type... why is 4/3 valve used..... same can be done with 4/2 valve with some line modification..... sir plz share your views on it..
Also, what if no.1 pump is running and fracture is in the line between no. 3 or 4 cylinder and isolation valve...

Direction of flow can be regulated by v/v and purpose of using that type of v/v is to direct the flow of oil into the ram cylinder according to the desired direction. And if you're going to use 4/2 v/v it'll lead to not only change in line but also in the arrangement of the system components.
See wherever is the oil flow if there will be line fracture then that line will have to be bypassed and operation will switch from pump1 to pump2 to achieve the desired direction.

sir if flow reversal is to be done by DCV then what is the point of installing variable delivery pump. swash plate and hele shaw pumps are capable to reverse the flow. Any normal positive displacement pump would suffice.
And about the leak..... can you please explain the sequence of event (how the valves will operate) in case of no.1 pump running and operating all four rams, and leak occurs in the line between ram no 3 or 4 and the isolation valve?

See it is only a simple animation to show the normal working sequence of 4 ram steering system. Don't worry about pump . And yes the use of different types of pump is to keeping in mind of several things like use,economy,safety,purpose etc...and this all will vary accordingly.
Go through the video carefully as it contain plenty of info that clear your doubts👍
