Any types of jumper wire you can use ,I use here male to female 20cm jumper wire.The important is to transfer the data and power only.

Can this set up be done without a laptop? Or is the laptop the power supply to the display?

Laptop is to upload the code only, after done upload the code you can remove the laptop and power Arduino by other power supply between 5 to 12vdc.

What about the calibration factor ??how do you get that value?Will they change for different objects or stays constant

Calibration factor can be determined by performing Calibration. It can be done by going into the examples folder then under the HX711_ADC folder there is an example called calibration. Read the instructions carefully and perform it, at the end it will show you a calibration factor which can be used here.
