It's most likely the smell, westerners can't handle unfamiliar smell and don't usually understand the umami palette of MOST foreign cuisine that isn't european or latin american. Our meals are not indian curry level of extremes in smell, but when the dish consist of vinegar, soy sauce or fish sauce it can be understable. Most people get freaked out at just the thought of it. To answer Kimmy's question about why the adobo turns solid when cold, good chicken stock has gelatin in it from the bones that simmer, that’s what makes it so rich. So when it’s cold, it solidifies like Jell-O, but liquifies when it’s hot.

13:15 fun fact about Olivia saying the chicken broth makes it gelatinous in the fridge is that broth is made from the chicken bones simmered for a long time. I remember my Chef told me that you can tell if the broth/stock is really good when you fridge it and it becomes gelatinous by the time you take it out of the fridge. The stock/broth are made from either chicken or beef bones simmered for hours with aromatics usually carrot, onions, celery, and herbs until it releases all the flavors from the bones. It can either be roasted(brown stock) or just blanched (white stock)
