Thick ribeyes. Took off the grill at 110 degrees in order to allow a little more sear. Topped with butter and blue cheese and got busy. After the reverse sear you won't ever go back to just plain old grilling. Great video.

So the difference is that the Grill Grates are made of a different type of metal, and are a different shape. Those two things in conjunction allow the Grill Grates to get up to a much higher temp. than the rounded, stainless steel grates will. The grates that come with your grill are fantastic, and they’ll last for years with no problem because they’re stainless steel. These extra Grill Grates are just for the quick cooks when you need that high temp. sear.
I got a question, what do you do with the steaks while waiting for the grill to heat up after cooking them at 225F? I always takes my Silverbac some time to get to 500F from 225F.
Question. What should I do with the steak when I pull it off to let the grill get up too 500° ? Should I cover it with tin foil and a kitchen towel? Or just throw it on a plate in the kitchen?
Just got mine Ken and worth the money plus with free shipping. Cooks like a champ and the quality put into these you see when you open the box or when you open the lid when cooking. Can’t go wrong.

Looks good. I pull my steaks off of charcoal at 125 so I probably don't want to wait til 120 to pull off smoke

I've been doing this exact method for about a year now. Best steaks you can imagine. I prefer a nice Cherry wood for smoking them.

If you are trying to maintain a perfect rare to medium rare center, then you want to start out with your steaks cold. Just makes that process easier.
When smoking the smoke will adhere to a cold steak better, and you're cooking at low temp for a longer period, which is why you put it on cold.

Looks like a good way to overcook a perfectly good steak. I pull a MED RARE steak at 120 degrees.

Forgive my ignorance. Why would you start with a cold steak if you’re bringing up to temp with a temperature probe?

@Jessie Sanders it is called a trailblazer 340. gave to my brother...I can say it worked ok, but its not like the grilla.
