- Hi everyone! It's another fantastic Fishy Friday, and I'm delighted that you're here with me. I´m aboard the Ventisquero, a fishing vessel that catches Chilean jack mackerel just off the coast of Chili. All done in a sustainable way, of course! Chef Sandro, our culinary maestro on board, is about to unveil his favorite mackerel dish: ceviche from jack mackerel. In this video we'll show you how to make this fresh dish with vibrant colors and beautiful flavors!
This incredible fish offers a superb alternative to Atlantic mackerel, which lost its MSC certification in 2019 due to disputes over fishing quotas, leading to overfishing. But not to worry, once you have tasted the jack mackerel, you don't want anything else. It's oily, packed with healthy omega-3 acids and super, super tasty! You can enjoy jack mackerel from a can, smoked or fresh in ceviche, like me and Sandra are making today!

Can you make this ceviche with any type of mackerel? Also, what makes this MSC certified? Do they target the mackerel and is it partly due to the stable populations?
Mackerel is an oily fish, right? Isn't that not good for ceviche?
