- Try this easy and healthy eggplant rolls recipe! A delicious dish that is quick to prepare and full of flavor. Perfect for a healthy meal!
1. Cut the eggplants into thin slices.
2. Soak the sliced eggplants in salted water for 5 minutes.
3. Dip the eggplants on both sides in beaten eggs.
4. Fry the eggplants for 3 minutes on each side until golden brown.
5. Prepare the sauce: grate 2 cloves of garlic and mix with 150 g of mayonnaise.
6. Brush each fried eggplant slice with the sauce, place lettuce leaves and sliced tomatoes on top.
7. Roll everything up like sushi rolls and carefully wrap it into rolls.
Ingredients:
- 2 eggplants
- 1 tomato
- 2 eggs
- 2 cloves of garlic
- 150 g mayonnaise
- lettuce leaves
- Salt for the water
