In Texas we would use lard instead of olive oil but it looks great.

Thanks for a great vid & recipe. I use a large stockpot to press my tortillas. I put the dough in a gallon ziplock with the side seams cut…lean on the pot to flatten the dough.

Not sure why it's strange, it's the same recipe as most Mexican tortillas. It's just flour and cornmeal and water and oil. Anybody can make them

There really is no substitute for it to get that authentic corn tortilla flavor. You can however use plain flour, but expect a different flavor as a result.

From our family region the most traditional way to make tortillas we just use salt, masa harina, & water. We use a tortilla press to get the shape and slap it on a hot pan(preferably cast iron skillet). Oil is optional in the dough but if your used to using the dough and get your water ratio right, it doesn't need it. This is different....... But it doesn't sound bad. (also really like the brand best its the best for organic corn tortillas!)

I visit Mexico regularly (I’m there now). I have attended several cooking classes and watched tortillas being made at bakeries and markets, and none of the Mexican cooks I have met use olive oil in their tortillas. So this recipe isn’t authentically Mexican, but I’m sure it’s tasty and easy to prepare.
I know. When Jemma said she was adding olive oil because everybody said tortillas need fat in the recipe, I was like, "Nooooo, Jemma, they all said use lard."

Quick question- I want to make your 5 ingredient no knead bread. Can I use freshly milled wheat for the all purpose flour part? And I can use bread flour for the rest.
Technically, you can. Flours do not absorb liquids the same way; it may need more, or less the amount required in the recipe. Hence, you may need to adjust the amount of liquids/ wet ingredients. Gradually add the liquids when combining wet and dry ingredients. Stop when the dough comes together and reaches the same consistency as shown in the video. I hope this helps.

Hi Gemma. What can I use instead of masa harina if it's not available where I live.
It's an essential ingredient. If you substitute it with flour, it will still be a kind of flatbread but it isn't nowhere near the flavor of corn. It can still turn out well though.
As a mexican, i feel a little insulted by de flour in a corn tortilla, but i love your channel
Please don't be. I don't claim to be an expert in traditional recipes from other countries, but I do try to make a version that other bakers, who may not have access to traditional ingredients, can relate to.
I had a lady that worked for us since my kids where little that made really good tortillas I will give it a try and see what my kids sat

I one time saw a brief video of someone putting a tortilla into a toaster and toasting it for a brief time. It puffed up like pita bread and then could be cut and stuffed. I noticed when you tore your tortilla that 2 layers appeared. So I wonder if it could be done with your recipe. Then one would have a tortilla or a pita.

Hello, I have made corn tortillas by adding wheat flour. I do enjoy them. I didn't have enough Maseca for a full batch. I prefer Maseca to the health food store brands. I usually use all corn flour
Generally, I just use Maseca, water, lime juice and salt. I have added small amounts of olive oil sometimes or fresh ground pepper.
In a pinch I've used a round cake pan instead of a tortilla press. You just press down on the masa ball.
I've learned smaller batches are best. Homemade corn tortillas don't store well, in my humble opinion.
For once, I have a tip for you. Try homemade enchiladas, casserole style, with homemade corn tortillas. It's a lengthy process, but delicious. One of my cousins says they're the best enchiladas she ever had, and we grew up eating enchiladas.

What could I use to make them gluten free?

If we grind our own corn, will our meal work as well as Masa?
I'm not sure how that will turn out as I've never tried it. Sorry, I'm not much help on this.
Only if you nixtamalize dried corn kernels. It’s a process. Boil together dried dent corn, calcium hydroxide, and water; let it sit; then drain and rinse the corn to remove the outer husks. This corn, now called nixtamal, is ready for grinding into a sticky paste/dough or “masa” for tortillas or tamales. At this stage we also call this hominy.
We always referred to dried corn as field corn. It’s also called “dent” corn. It’s the same product that is added to animal feed. Corn that hasn’t been nixtamalized will barely form a cohesive ball, let alone survive the tortilla press. It’s fragile and crumbly. Example would be corn bread which is made from untreated corn. Corn bread is made with binders-eggs, wheat flour and other ingredients. Polenta is cooked into a porridge consistency which forms a solidified loaf when chilled, but you would not be able to roll out into a tortilla or make tamales with it.
I will say this, masa harina (nixtamalized corn flour) or canned hominy is bland when compared with fresh nixtamal, which has a deeper buttery corn flavor.
Is masa harina the same as maseca corn flour or?
Use the maseca, Masa harina can mean a variety of things. Read the side of package you are looking for something that says nixcamalized or hydrated lime treated. Don't use PAN brand , it is just milled corn, not treated.

These are everything, BUT corn tortillas. Corn tortillas use corn masa or flour (aka Maseca) and definitely NO fat.
Corn tortillas shouldn't have white flour at all. But ok, it's you. So I'll give you a pass😅😅😅😅
as a Mexican, DO *NOT* put wheat flour on your tortillas. Tortillas are not supposed to be starchy, if you have them coming out "starchy" is because you don't have nixtamal corn. Masa harina should be a fair enough ingredient to mix with salt and water ONLY.
The masa made in this video came up very dry, there's no need to have it rest because there's no need to have gluten on tortillas.
And olive oil? at this point just call it flat bread
I know this is an interpretation from an Irish woman, but c'mon people, why modify something not for the better... if you don't like corn tortillas and need the gluten there, just eat bread.

I'm sorry but these are not real tortillas, these are a Tex-Mex invention. I am Mexican, corn tortillas ONLY contain corn flour, salt, and water. There is NEVER oil in them or wheat flour.
I’m Mexican-American from south TX and I’ve never put flour or oil in corn tortillas. My grandma & aunties would all shake their heads. 😩
