Hi Jeremy! I watched this video and realized I had everything to make this (except the houtou noodles), and since it is cold and rainy here I decided to give this a try. I substituted fettuccine noodles for the houtou noodles, and accidentally left out the meat, so this ended up being a vegetarian nabe. To tell you the truth this was so hearty and filling, we did not miss the meat one bit. In fact, I did not notice I had left out the meat until we were almost finished. My husband, who is a fussy eater, loved this dish and ate multiple bowls (so did I 😋). This dish had such a hearty yet refreshing flavor without the meat, that I think if I’ll make it again I will make it vegetarian on purpose. 👍🏻
Those hoto noodles look good. Slippery and slurpy!😜 I’ll have to add some more ingredients to my pantry. I’m getting close to being able to replicate your recipes.
