Esse processo se chama Temperagem. Ele é essencial para a cristalização correta do chocolate. Ele espalha o chocolate na temperatura certa (ex: 40°C - pode variar dependendo do chocolate) e faz a espatulagem nele até que ele chegue numa temperatura de aproximadamente 29~ 32°C aí ele pode pesar e moldá-lo como quiser até levá-lo rapidamente a geladeira para dar um choque térmico nele. Assim produzindo aquele chocolate brilhoso e sem nenhum problema (como fat bloom que é um indicativo de uma temperagem mal sucedida). Espero ter ajudado~ :)
Its because you can't add all of the ingredients in a single time (cause you may break the machine). If he put the cocoa nibs in the melanger today it has to be ground till it is in a liquid form. And just them add the sugar and cocoa butter.
