I love their cover of “Fix You”
This is one of my favorite covers they've done next to Fix You. Jimin and V together are chef's kiss and Hobi was riding the hell out of that beat and Yoongi's verse and Jinnie's high notes and JK's ad libs!!! Just incredible. Their chemistry is insane.
V is a baritone- the only vocal line baritone, though Jin can reach astoundingly low notes as well- but his falsetto is remarkable. It's always amazing to me how V's silky, dark-honey voice and Jimin's angelic-sweet voice blend so perfectly. They're like that in personality, major opposites, and yet they're so close they call each other soulmates. I always end up thinking, 'Even their voices are soulmates, a perfect foil to each other.'

Jimin’s voice is my favorite. His vocal tones are amazing!

Taehyung is a natural baritone and he has the widest range in the vocal line. His range is Eb2 - C6 (3 octaves, 5 tones and 1 semitones). He can hit high notes to C5 on the tenor range as well.
The BBC Loung 1 lives were one of the best they did as a group.

I know it's been said, but check out the cover of fix you by cold play, it's beautiful. jungkook also did a cover of Harry styles "falling" there is just a video with his name and name of song. but its absolutely beautiful as well 💜💜 that one got me in my feelings on how stunning it sounded

If you haven't already, you seriously NEED to check out BTS' cover of "Fix You" by Coldplay, it's so beautiful.
As for solo covers, I would recommend Jungkook singing "Falling" by Harry Styles (in my opinion it's better than the original);
V singing "Someone Like You" by Adele (the MV is so simple, just Tae walking down the street, but it's AMAZING); There is also Tae's "Le Jazz de V" video, where he covers "It's beginning To Look A Lot Like Christmas", and "Cheek To Cheek" (a duet with Seo Minna), and shows how amazing he is at the old standards.
Jin singing "Autumn Outside The Post Office" by Yoon Do Hyun (it's such a beautiful song, and Jin is incredible singing it.

I know it’s about how beautiful the voices are on this cover, but for me I just need to cry at how absolutely breathtaking j-hope looks. If you would have told me I was into all white cut off shorts and cowboy boots (which normally I’d find kind of ridiculous) but omg when platinum Hobi starts crooning, he could be wearing a garbage bag and look stunning😎

If I am remembering correctly this cover was done right after stuff started opening up after Covid:
RM changed part of his verse to say, "Do anything to see half your face" because at the time even the people you could see (which were few) all were wearing masks so only half of their face would show.
Suga did his own lyrics again referencing the pandemic with the English translation for his verse being:
"We’re now used to our routines taken away
But still can’t give up living on
We’re more worn out because we don’t know where this ends
We’re an island we made ourselves because we couldn’t trust each other.
Hope an end comes for this tiring pandemic virus Negative thoughts can sometimes be a minus
I knew it wasn’t the end so I couldn't say bye

Then J-Hope says:

BTS truly took this iconic song & made it their own.
I highly recommend this whole set and I VERY HIGHLY RECOMMEND their MTV Unplugged set, they do an amazing Coldplay cover init. I have been an ARMY for almost 11 years now and they still surprise me.

They are after all friends so yeah BTS have done the odd cover. Even Jungkook did a Live Cover of 'Let there be love' by Oasis on Radio one

I watch this cover quite regularly, it's just amazing and my favorite. I love the western fits from the PTD era too! They did a lot of beautiful non-dancing performances for BBC One and also MTV that are totally worth checking out. Fix You is one for MTV. My favorite might be Blue & Grey. 💜

As you mentioned V is a baritone and his voice is naturally deep and soulful, he has a very wide range so he also achieves treble and reaches high notes similar to the tenors of the group.
I really like this cover, but I enjoy more the one they made of Coldplay's Fix You, which was rated by Chris Martin as "Beautiful".
Also good is the one they made at the end of 2016 of Seo Taiji and boys called "Classroom idea"; as a reference Seo Taiji and Boys are considered the first idol group (kpop), even Seo Taiji is called "cultural president of Korea".
Months after the cover BTS received the invitation from SeoTaiji to participate in the concert commemorating the 25th anniversary of the group's debut; there were other guests but BTS was the one who had the most participation that night and in media they considered it as a pass of estafeta as kpop icons.
Seo Taiji were also known for including messages in their music.

I'm gonna dodge around your 'pick just one' and say: I'd love for the group to cover 'This Is Me' by Keala Settle, from 'The Greatest Showman'. I'd love the vocal line to cover Simon and Garfunkel's 'Bridge Over Troubled Water', and I'd love the rap line to try Simon and Garfunkel's, 'I Am A Rock'.

The original of course was about missing a friend who was killed. For BTS, COVID-19 killed their chances to see the fans. Their huge concert world tour was postponed, and later cancelled. For the original line that said, "Give anythin' to hear half your breath," RM changed it to "Give anythin' to see half your face," referring to a face half-hidden by a mask. Sometimes South Korea's lockdowns were so extreme, no one could get together, even if they were wearing masks.
You can also hear SUGA in his rap, rhyming "virus" and "minus".
Which reminds me ... Have you seen their Korean language pandemic song? Life Goes On. It gets forgotten because it came between Dynamite and Butter. But it did debut at #1 on Billboard's Hot 100, the first primarily Korean language song to do so.
