A German Kartoffelsalat has to be schlonzig. What does that mean? It’s a sensory mark of approval that properly cooked potatoes have been mixed with the correct amount of hot stock at the right temperature so that they soak up all of the flavours without turning into mush. When used for food, schlonzig describes an ideal consistency for a creamy starchy dish like risotto… or a potato salad. It’s also what a Swabian grandma would use as an undebatable excuse when one questions her adding yet another tablespoon of vegetable oil.
I think this is a proper south German potato salad. People from North Germany may do it completely differently.

I’ve never seen potatoes look so appetising. The food you prepare always looks good. My partner was an excellent cook - he always did the cooking and I miss it now he’s gone.
Sorry to point out but this is just one kind of German Kartoffelsalat in northern Germany the dish made here is called a 'warm potatoe salad' whereas the classic cold variety is made with potatoes, Aussage(Fleischwurst), cornichons (Gewürzgurken), boiled eggs and mayo 😊

As an American, German potato salad reigns supreme. There are so many versions I've had from different regions, but all of them are fantastic. Can't wait to try this one tonight.
German potato salad has been my go to contribution for several cookouts and I've converted lots of friends and nearly all of my family to the German ways. 😂 No more potato mayonnaise soup for us.

Lol the mayonnaise "soup" is a staple for Christmas, new years and Easter in here, don't think I'd convert my family, we do luv German style for non-holiday occasions though

There are types of German potato salad that do use mayonnaise. The one in the video is specifically from the state Swabia. The American version is basically the North German one which makes sense since North German cuisine influenced the US far more (see Hamburger etc). Though despite being from the north I have to say I much prefer the swabian stuff.
@@XMysticHerox You can't really call Swabia a "state", since it's a cultural region in the east of BW and in the west of Bavaria. I think "nation" would be more appropriate. Also as far as I know, the Germans that settled in the US were mostly from the Rhineland Area and the Alemannic regions, which are indeed more to the south than to the north. You can still here it in the dialectal sprinkles of German Texans, Pennsylvania Dutch or the Amish' speech.

I loved German potato salad because it’s the closest one to the Syrian potato salad. I like the American potato salad that’s creamy too! But I prefer the vinegar

The syrian is made with lemon juice, green peppercorn, salt, pepper and finely minced lemon balm, peppermint, chives and parsley?

We have two different types of Kartoffelsalat - the North and the south. That ist the south type, without mayonnaise. The north type is with mayonnaise 😉 but every family have an own recipe.
Oh wait, we have three different types. The east type are also exist.
There is "real German potato salad" with mayonnaise. As usual the american recipee is from north Germany.

I'm from Austria, so I prefer this version. The mayo-dressing version is too rich for me except if you use homemade mayo which tends to taste a bit more light to me, but this is how I like it!

Rhinelandic potato salad looks WAY different.
Ours is basically just: salt, pepper, Mayo, pickled cucumbers + some of the liquid (sour ones prefered), Fleischwurst (no idea if there is an english equivalent), eggs (cooked and diced), peas & carrots (Bonduelle, so pre-cooked) and other things depending on taste like onions, pepper (paprika), spring onions, etc..
I'll try to convince my family to try this version too for a change. Looks good~.

Vegetable stock, finely diced onion, white wine vinegar, salt, pepper, bring to a boil, turn off the heat and stir in the mustard. Try turning on the captions to better enjoy the videos. Cheers.

To cook faster, precook the potatoes in the microwave. Then boil the potatoes.
Ok that's a different German Potato salad I learn in homec in school 30 yes ago 😂😂😂😂😂😂 they used red potato and bacon in the salad and cooked on the stove.
I don't usually like potato salad, but this actually sounds good to me. Maybe I just need the right potato salad. I'll have to find a way to avoid that mustard though

I have tried like 4 times to make this and followed internet recipes similar to thus one to A TEA, and I still cant mimics the one I tasted in Germany...I even tried leaving it for many hours to absorve to see if that was it but no...I dont understand....

My grandma's potato salad is completely different. The 'dressing' i think is basically just mayo. My cousins love it and it's supposed to be a 'classic' but i can't really eat it at all 😅 it's kinda gross

A lot of nutrients and fibres are in the skin. Nature rarely produces something unhealthy that’s edible, usually it becomes unhealthy when we do something to it.
