Can't speak for LSU, but Carolina played Stanford in both of the last 2 seasons, along with playing them in the tournament:

They are not in the same conference, and there are only so many non-conference games you can play each season, so it's hard to play everybody each year.
Plus, teams work out their schedules in cooperation with each other, so it may have to do with Stanford's scheduling just as much as the other team.
