- The mocha cake is a moist and fluffy chocolate cake with coffee flavor and has its own quirky taste which many people, especially coffee and chocolate lovers, find extra delightful. The mocha cake is really irresistible and is arranged in layer with oozing mixture of butter, milk chocolate and coffee granules.

For the cake base
4 egg whites
1/4 teaspoon cream of tartar
1/4 cup white sugar
1 cup cake flour
1/2 cup sugar
1 tablespoon cocoa powder
1 teaspoon salt
1 teaspoon baking powder
4 egg yolks
1/4 & 1/8 cup vegetable oil
1/3 cup evaporated milk
2 tablepoon coffee granules + 1/8 cup water
DIRECTIONS
To start off, prepare the egg white mixture by whipping the egg whites, cream of tartar, and white sugar until stiff peak forms. Set aside.
In the other bowl, mix the dry ingredients by sifting cake flour, sugar, cocoa powder, salt, and baking powder. Mix well.
In another bowl, combine the egg yolks, vegetable oil, evaporated milk and the solution of coffee granules and water. Mix well. Put the dry mixture portion by portion and continue mixing.
Then, cut and fold the meringue (egg white mixture) to the cake batter. Mix gently until well-combined.
Transfer each half of the batter into two 8×8 pan with parchment paper. Bake for 13 - 15 minutes inside 160 °C or 320 °F preheated oven. Poke with a toothpick to check the consistency.
For the frosting, combine coffee granules, cocoa powder and evaporated milk. Stir and mix well until complete dissolved. Set aside.
In a mixing bowl, whisk the unsalted butter until light and fluffy. Add the coffee-cocoa syrup. Whisk until well-combined. Add half of the powdered sugar. Mix well. Add the last half of powdered sugar and mix well until well-combined.
Assemble the cake and add the frosting. Put some frosting in between the two baked cakes to serve as fillings. You can also cover the cake with the mocha frostings and set a decoration using a star-shaped pastry bag. Serve and enjoy!
For the frosting
2 tablespoon coffee granules
1 tablespoon cocoa powder
1/4 cup evaporated milk
1 cup unsalted butter
1 cup powdered sugar

I'd tried this and it turned out so sweet. Ending, tinanggal ko ang frosting s ibabaw. Enough n ung frosting s gitna. Maybe 1/2cup of powdered sugar is enough.
Small tip for anyone who wants to try this recipe -> prepare and mix the dry and wet ingredients first before whipping the egg whites. Since it’s the last thing your adding to the mixture, it makes sense to do it last.
❌Don’t let whipped egg whites sit for too long on the counter❌

That's what I observed while watching this vedio.I've been baking cake and everytime I am making cake that need meringue I always whisk the egg white last or together if i use a stand mixer .the meringue is a very delicate mixture.tiny air bubbles will slowly evaporate while on the wait.(deflated) This is a good suggestion to whoever bake a cake with meringue (chiffon,sponge,angel food cake etc)no offend to the owner of this vlog.we just want to share our knowledge thank you.

I want to give it a try but instead of whisking the egg white first, I'm going to prepare the batter first,then make the meringue. In that way my meringue will not deflate. if using a stand mixer,then I can do it at the same time.in making cake that calls for meringue, whisk the egg white, tartar,sugar mixture last pls.this is the proper way
It should always be the batter because the bottom part of the meringue tends to moisten or even become watery if prepared so early.
I’ll be trying this recipe for the coming weekend. My mom in law loves mocha cake and this will be my first time baking this one. Hope it’ll turn out great since i’ll be making this as a surprise ☺️ thanks for sharing this amazing recipe 🥰

If you like mocha icing like goldilocks, use mocha flavor Italian meringue buttercream. Just add bittersweet chocolate and espresso powder to the buttercream.

of all the cakes, Mocha cake is my favorite and Goldilocks is the brand I grew up with, this is a must try pero sguro 1 TBSP Coffe granules or power lang is enough for me na hehe!
