Just tried your recipe, Chef - they came out amazingly crisp and yummy. My family just devoured them hot off the frying pan! I have been cooking for many years now, but never knew that ginger garlic paste used in bajji (fritters) could add so much taste (had never used ginger garlic in the batter before). These are the best bajjis I have ever made in all my years of cooking. Thanks for sharing a secret ingredient few would probably share. I also used a Nicer Dicer which helped slice the cooking plantains really thin - so they fried even more crisply and quickly. Thanks once again and keep sharing your wonderful recipes with us!
The muriwalas on Vizag Beach serve these banana pakodas (cold) split in the centre and stuffed with finely chopped onions and coriander leaves, with a dash of lime. They make it with Chilli Bhaji also. Tastes yummy. If you've tried those Chef please teach us how to make it.
