Chile was amazing. So different then everything else in Latin America. Well actually I was only 3 times in Peru before so I can't compare too much. But Chile especially Santiago has such a european vibe too it. It's modern, the people are very friendly and open. It's also clean. Cerro San Cristobal is a must-see because you get a beautiful view of the city. You can hike up there for 1h or take a teleferico a few bucks, but for us hiking was really fun. We also loved to just wander around and explore the city with all the different barrios like Lastarria y Bellavista.
We were suprised how expensive everything is. It's prices like Europa and they automatically add a tip of 10% for everything which was suprising aswell.
For us the highlight was actually not Santiago but Valparaíso y Vina del Mar.
Valparaíso is so beautiful with all the art work on the walls. It's a beautiful vibe. It's a smaller area with such much stuff too see. You can reach everything by foot and theres amazing things like special houses, restaurants, art, museos, souvenir around every corner. I would recommend it for 1 day. Arrive in the morning and leave in the afternoon late as it's only 1h20 min from Santiago by bus. They have metro too that takes you from Valparaíso to Vina del Mar and you can try the very famous Completo in "Fuente de Soda Cevasco". It's really famous and the completo is really really big. It was well done but we actually didn't liked it too much. I mean in general we found the chilean food kind of lacking. They didn't have too much authentic food options that were actually from Chile.
Sorry for the long text but feel free to ask me questions if you'd like to know more about it.

I recommend fish and seafood in some small village on the coast, for ex. Isla Negra, where you can visit Pablo Neruda's house by the ocean. On the way there is Pomaire, a small town of potters, where you find very beautiful ceramics. It's very near to Santiago, you can go to both places and get back the same day.

Just a warning: the Mercado Central has been labelled many times as a tourist trap, and it's slowly (and steadily) going bankrupt. If you want to have a good meal, Plaza de Armas and Barrio Yungay will fit your needs better.
