Wow, so early! I'm really torn when we have unusually warm temperatures in winter/spring that gets the trees woken up a bit early. Sure, you might luck out and miss bad frosts / hard freezes... but you might lose your crop if things don't go your way.
I'll be excited to see where this series goes. We planted two fireblight resistant Asian pears last winter (Chojuro and Shinko). I had fun starting to espalier them along a fenceline. One of the trees didn't grow evenly so I think I'm going to start the cordons again with much more established roots. I'm not in a huge rush as I have 20+ other trees to deal with in the meanwhile.
I find that at the end of the first year is a good time to tie out your main scaffold branches before they fully lignify. You kinda want them somewhere between the new vigorous growth and the older, stiffer growth of the season. After the next season, the branches pick up quite a bit of size and can usually have the training stuff taken off. I experimented a bit with one of my front yard apple trees and it has a really cool open habit (4 scaffold branches at 30-45 degrees from horizontal). Some trees have a really upright habit that need a little help to be more open center. Other trees, like my green gage plum, just have a nice round shape. I didn't have to do anything to get 45 degree scaffold branches.
Rather than diging up and moving the small tree to your property consider air layering. Then you have the same tree in two places. I think you should air layer and move an example of each of your trees to your land. They will mature much faster. If you are going to develop the land, the trees will be fruting already. When you graft at home, you can do the same to the trees on your land. You can practice at home and prefect the variety combination on your lañd.

Looks like you have some nicely trained branches on some of your trees. According to someone who has been pruning trees for 30 years, if you train the branches to grow out ---even below horizontal - you will get more fruiting branches and less water sprouts. Stefan Sobkowiak professional orchardist says, "Do you want a big tree?".... while he reaches both arms high above his head... "Or do you want a fruiting tree?... while he lowers both of his arms out to his sides below horizontal. He says "Don't get suckered in to suckers and water sprouts" He says by cutting the suckers you get suckered in and suckers don't grow on branches that are lower than horizontal etc. Check it out. ruclips.net/video/o5vw78XRpNg/видео.html
