    Hi, I'm a friend of Poo (our family are going to work with the Thai Foundation she is linked to). Her nickname is Chompoo which translates 'rose apple' (a Thai fruit). This is shortened to 'Poo' in the slum community and, while this has no connotations in Thai, it has been a brilliant way to catch International attention! She is an inspiring, innovative and humble woman and I wish her every success.

      ***** Interesting. I had it differently. Poo = Crab in Thai language and is a common nickname, usually given by a grandparent.

      How does one becomes friends of Poo ? Is there a sticky ceremony ? Is there a backdoor way to becoming a member ?

      Chompoo is a common nickname that translates simply as pink.

      Michael Kelly That's true. While Poo's name is actually Chompoo, the name Poo were pretty common as well especially from the 60's to 80's.

    As a Thai person, I really cherish her works. The way she cooks side by side with the Famous Jamie Oliver, inspires so many Thai people to get into the kitchen again, very proud of her.

    I've laughed at the title of her book along with everyone. Seeing her live though is awesome. This lady is brilliant. Sorry, but I have to say it. Give us more Poo. Roll on Poo.

      ***** Aroi mak khrup. A Thai got upset one time when I used 'Lakorn' for Goodbye. I was told its more like a goodbye for a long time. Now I use "Sawasdee Khrup" for Hello & Bye. Oh mate, I'm hungry for a Phet, Pad grapow Gai or Gaeng par, in Bangkok.

    Seriously, I can't understand why some of the people below are so rude to Poo. She's amazing and talented. It doesn't matter what her name is. It's what she does for the slum community and Thai cuisine. She deserves some respects. Her Massaman curry has complexity and layers of flavours that I bet some of you can't even comprehend so you turn away from the food but to the person's name. What are you ? Cultural insensitive individuals ?

    When i had my first spoon of massaman i felt like a blast of flavours inside my mouth and literally closed my eyes and enjoyed this wonderful taste

    Galangal is a rhizome like a ginger, but the flavour is yin and yang. Ginger is hot, galangal is cool. Therefore you cannot substitute galangal with ginger.
    Just wanna let you know.... basic Thai cooking

      I'm sure you can use ginger if there is nowhere selling galangal. It might taste different, but will still taste nice.

      My mom is thai and she said better not to put at all if you cant find galangal because it is not substitutable

      If you don't have galanga il is better to do not put anything in than ginger. Two things are completely different in test and in Thailand you never substitute them.

    Poo is common nickname in Thailand, it actually means crab!!!

    What an amasing and tough and lovely and encouraging lady! Phantastic curry. Absolutely no "quick and easy-peasy" Recipie... I love it! Just managed to get some galangal root and I'm definitely going to try and make masaman curry. More of this on food tube, please!

    I also add coconut cream (it makes the sauce more rich and creamy), teeny bit of tamarind paste & shrimp paste to my sauce. It’s amazing 👌🤤. If you want something out of this world, use ox tail! It will change your life! I braise then slow cook the ox tail I’m the oven for four hours on medium low and once I add it to my sauce on the stove top, it’s fall apart tender.

      but as a thai people i would suggest u to try "แกงข่าไก่ Thai white curry"
      because Thailand have 3 type of curry
      - oily coconut curry like
      มัสมั่น ( Massaman in this video)
      แพนง ( Panang the less sweat+more cream+mor spicy than Massaman)
      น้ำยาหมี่กะทิ
      หลนกะทิ
      Massaman is the best of this type of curry in balace of flavor
      - creamy coconut curry like
      ต้มยำกุ้งน้ำข้น ( Tom yam kong nam kon)
      แกงเขียวหวาน(ชาวบ้าน) Green curry(normal one)
      แกงกะทิสายบัว ( Lotus white curry)
      แกงข่าไก่ ( Thai white curry )
      แกง ข่าไก่ ( Thai white curry ) is the best in this type of curry in balance of flavor
      - None coconut flavor (most of it have unique taste some people love it some people hate it so i cant recomment the best to you)
      like แกงส้ม ( Sour kurry )
      แกงเลียง ( Yellow none coconut curry
      = best for precnant woman)

    Looks so delicious. I was wondering if it's possible to store the Massaman currypaste if you make a batch of it, and if so, what's the best way and for how long?

      if you follow recipe from this video, you can store them in glass container and put it in a fridge. It can be store around 1 month or more in fridge.

    quick question. I have a beautiful pestle and mortar but in the case that you don't have one, can you grind and blend the dry and fresh ingredients into a paste in a small blender? Jamie did it with his prawn red thai curry. Just thinking out loud. Please reply :)

    Jamie, you should try looking for someone expert on cooking spicy beef rendang padang from indonesia. And their sambal ijo, those are famous food that nobody could resist. Try it, you'll love it!!

    Quite a few of the notes on the video don't correspond to Poo's instructions! Firstly. She's not using tamarind paste but taramind sauce! Use tamarind sauce, people! Secondly - when she dry fries the fresh ingredients, she asks Jamie for the pan to be really hot, but the screen notes state low heat for 5 minutes! She asked for low heat when dry frying the seeds!

    I've made this curry a couple of times and it's always tasted great... but every time it ends up an unappealing grey colour. Any advice on how to improve this so I can serve it to other people?
