    A recommendation on the cheek meat. When your cutting the skin, leave a little bit of the skin intact near the eye. You can use your thumb to pry the meat up towards the eye, and it peels right off the skin.

      Good tip, I was thinking the same thing. I actually just cut a half circle, jam my thumb in right to the cheek bone and pull it out and right off the skin. Zero meat wasted every time.

      I just commented the same thing, LOL. Same with the wings. The skin will pull right off around the fins.

    My buddy showed me the walleye wing a couple years ago and had never heard of it from anyone else until this, nice work!
    IMO, peanut oil is the superior fish fry oil.

    I have been cleaning walleyes for many years and this is the first time I’ve seen the zippering trick, I will have to try that next time…thanks for tip Clayton! Keep the vids coming, I love the content!

      Getting the lateral line out of any larger fish drastically improves the flavor. Also removing the darker meat that is just under the skin. Especially with salmon. Even if I’m smoking it I refuse to have that left on the meat. Try it sometime and you won’t go back.

      Really, no ice in Northen MI. Man, I live in SE North Dakota and the lake we fish already has 10 inches. We havent gotten to actually fish yet but guys are already on side by sides. a midwestern cold snap is coming next week Mon and Tues so hopefully you guys will get some ice.

    Great video. Gonna have to try and zipper method. Haven’t filleted a ton of walleye. Mostly due to not catching enough😂

    Great video as always, Clayton! I clean my walleye the same way as you, like to prolong the life of that blade. Still taught me a thing or two with the wings and zippering. When I do cheeks, the knife goes in, slides under the cheek, and when it flips out, I skin it as the knife slides out. Skin stays on the fish, cheek goes in the pan. Thanks for the great vid, keep'em coming!

    Yes. Totally agree with getting most of your cuts done on one side of the fish and leaving it on while going to the other side. Thought I was the only person that did that

    A little trick with the cheeks is cut it out but leave a bit of skin attached to the walleyes face grab the cheek meat and pull it right off leaving the cheek skin on the fish. Love the vids Clayton!!! Tight lines

    I started grabbing the wings last season.
    They taste fantastic! Most leave them on the carcass. Try them, you won’t be disappointed!

    Great vid! I've also cooked the wings from bass and northern. there's not much for a cheek on bass, but nothern pike have good cheeks on them too!

    A great tip for checking oil temperature is to use a heat gun. And yes 375 degrees is the temperature you are shooting for.
    A hint or two to Santa and perhaps you will get one in your stocking.

    My dad taught me to filet the same way only difference is we don't cut it all the way off at the tail. We leave it attached right at the fin and then skin it. I like that zipper trick though. I wanna try that as usually I just pant leg it

    Right under the Fins/wings the heart is in that pocket and on bigger fish its big enough to eat. It kinda has the texture of cheeks it not bad.

    i fillet my perch and crappie the same way. Bit slower of a method but you get the most meat possible.

    Love your vids Clayton! Question for you: is there a reason why you don’t drill a second hole for the transducer? It seems like it sometimes gets in the way for folks (not just you) as they try to pull the ducer out of the way while fighting fish. Curious if there is a reason? Love your stuff. And thanks for that zipper trick.
