I did this one today. Gas grill with a smoke tray worked well. I went a little heavy with the sugar so it didn't harden the way I would have liked, but I set my broiler to low and finished the crust in the oven. Best turkey I've ever made - might be the death sentence for Thanksgiving deep fried turkey. Thanks Malcolm, you're a National treasure!

Barely a few days go by before I'm back out there firing her up and getting her ready for the next cook. Just me, some wood, fire, and my smoker. Staying at home hasn't been bad at all, best of all I can see my neighbor watching me over the fence wanting to come over and eat
Love it! Thank you. I brine my turkey breast in a salt, sugar water brine for 24hrs. I rinse them, pat dry. Season with dry rub. Throw on smoker. 250F ish. Light flavored wood. And you’ll have the juiciest turkey breast everytime
I smoked my first couple of turkey breast yesterday for Thanksgiving. I used your method as a guide with minor changes and everyone said excellent job. It was pretty awesome. Way better than baking a whole turkey.
I cooked our Thanksgiving turkey breast using this recipe and it’s fantastic. Few tweaks: a 12 hour brine and let it sit with a seasoning on for about 2 hours before cooking on a charcoal grill (indirect method). Everyone loved it! Toys cook time about 2 hours.

Hey Malcome; I thought I'd take a minute to send a note and let you know that me and the family up here in Canada enjoyed this recipe over this Thanksgiving weekend. I brined the breasts over night (3/4 cup kosher with 1 cup of brown sugar in 8 liters of water). I rinsed them good and dried them on a rack in the fridge for a couple days. My dry rub consisted of sage, thyme, oregano, garlic, salt, pepper and smoked paprika ground up in my spice grinder. This was applied on day two and left for one more night. My baste was similar to yours but I added a little Franks and reduced to one half. I love the idea of a sugar coating so I used some demerara for the last half hour. Easily the best turkey I've ever tasted and the rest of the family says the same. This will be a traditional recipe for years to come. Keep doin' what you do!!
My son harvested his first wild turkey last weekend and when I asked him how he wanted to cook it, he said we had to "find that honey turkey that Malcolm made". Turned our beautiful and delicious.
Malcom, Making this today due to some crazy circumstances. But our freezer stopped working and we had some butterball boneless turkey breasts that we never used. Thawed them out and they’re on the pit boss smoker right now
So after a Covid interrupted Thanksgiving, I did this recipe today and man it is spot on some of the best turkey I've ever had. Only change was I used Meat Church Honey Hog for the seasoning. Only complaint is I didn't have those HUGE meaty turkey breasts!
