      Quick question: why put the blocks of wood directly under the meat? ( on the actual cooking greats?)
      What does that do? Never seen that.....might be a secret? I love little details like that lol

      Brandon OBrien makes a dome shape that stops the puddling of liquid on the top thus making a nice bark.

    You guys never cease to amaze me... In this day and age, it's so refreshing to watch a group of people, who all met through a common passion, interact with each other. All of your, lack of egos is a treasure. Before I watched this video, I was watching a Myron Mixon video... I had to turn it off. His ego is out of control. Thank you all for what you do. Withought you guys, I would still be fumbling around with the first crappy smoker i bought... The "El Cheapo Brinkman". I also, loved BBQ Pitmasters... I always admired Harry. It was great to see him pay "ya'll" a visit ;) Another great video Justin!

    Great video Justin. I've been fortunate to compete against Harry Soo many times. You are right, he is a giver for sure. He taught my wife how to build blind boxes in our first ever competition back in 2010 while we were competing. Our presentation scores have always been top notch. He and Donna Fong are class A folks. This is such a better reality show than anything I've seen on TV. I want so much more of it. I wish I was there, this literally looked like a blast and I have so many questions. Like why did you place briskets on top of wood chunks when you put them in the smoker? You really did a great job with the editing. Very well done.

    • @BabyBackManiac
      @BabyBackManiac  6 лет назад +2

      Thanks, Steve. I appreciate that because I think your “Bobby Flay meets Casey Neistat” editing vibe is really cool.
      The wood chunks was to keep the condensation from pulling on top of the brisket and messing up the bark. Also it gives my dog something to do now. LOL it’s a brisket flavored doggie chew toy.

    I found your channel when I was deciding to buy my WSM. I have a Performer Platinum (in the best color, copper) and wanted to get a true smoker after being frustrated with the lack of decent temperature control with the "wings". I love to see the passion in your videos, and this is no exception. The amount of information crammed into such a short video is a testament to your passion and dedication to not only cooking, but education others along the way. Keep putting out excellent content!

    So I'm 63 years old and I've been killin' and grillin' since my late teens. I really enjoyed this video as this is what cooking and hanging out should be. So Now I preach a little. I've cooked on everything from 55 gallon drums cut in half to my current RecTec pellet grills. I think in terms of flavor the WellBuilt 3-in-1 vertical gave the best flavors due to using quality chunk charcoal and my secret for smoke, soaked green hickory nuts. For straight up grilling, steaks and chicken, the Weber Q was the best grill I've ever owned. I now do all my cooing on the RecTec RT-380 "kettle" and my older RT-680. I love the bullseye because it will get to 600+ and do a quick dinner or I can run it low and do butts, whole birds and game meats. My 680 I can do 8 butts, or 4 to 6 turkeys or anything you can imagine. My go to when I need some bucks is whole racks of which I can do 16 at a time. I use it for special order cooks for folks at work or when we're having company. Many say the pellet grills are cheating in a way but I need reproducible results with a minimum of intervention. It's the pellet that makes the cook and I use Power Pellets. I'm working on rubs and am always changing up but for purchased rubs I buy Everglades Seasonings BBQ rub. Off the shelf sauce for pork products is Bone Suckin' Sauce out of NC.
    Harry said it best in that there is no one way to do BBQ. I'm a low an slow because I'm not up against the pressure of competition.
    Thanks Justin for the great video and lucky you to have had it in the back yard! Subscribing today!
