100% agree. It's because both are DFS-based algorithms that more-or-less generate an entire path at a time, make a dead end, and backtrack---what a human might do. A lot of the others generate sequentially or randomly, but they produce far fewer coherent paths, and thus feel a bit "off" for us humans.
I used Depth-first to generate a maze for a Tanks game. Then I just randomly chopped of walls from areas and I was left with open, but mazey random levels, perfect for the Tanks game.

I've thought about this a lot and I think in practice the best mazes actually have long parallel paths where your eye has a tendency to accidentally jump a wall. One artist found an easy way to generate large square spirals which are a pain to traverse visually. From a 1st person perspective I guess you'd want to maximize the number of knight moves (forward 2, over 1) followed by a junction, to create the most paths which can't be checked visually.
The noises and visuals remind me of those point and click "Edutainment" games where one of the Science characters are telling you a fact about something on a computer, and the images have the pixel transition effect
For a class we had to implement a maze generation algorithm but I refused to look up an existing ones so I made my own. It used A* to path two points on a grid together, then used A* again to path a point not yet on the maze to a point on the maze. It was horrifically inefficient but if you messed with the weights you could get it to generate pretty cool cavern looking things and something that at least sort of resembled mazes.

Here's a short explanation: Binary tree - iterate over every cell starting from top left. For every cell randomly carve either up or left. Sidewinder is a bit more complex. Basically you carve right until you randomly decide to stop, then choose one cell at random from the group you just connected and carve up.
