  • Old fashioned carrot cake with walnut cream cheese icing. Ingredients are
    2 cups self rising flour
    2 cups sugar
    1 tsp baking soda
    1 1/2 tsp salt
    1 heaping tablespoon cinnamon
    1 1/2 cup canola oil
    4 eggs
    3 cups shredded carrots (1 lb bag of carrots)
    Mix fry ingredients then add oil and eggs, mix then add carrots
    Bake at 350 for 15-25 minutes check after 15 to see if pulled away from sides, don’t overtake
    Icing
    1 block of cream cheese (full fat not light)
    1 stick real butter
    1 box powdered sugar(4 cups)
    2 tsp vanilla extract
    1/2 tsp almond extract (optional
    1 cup chopped walnuts
