Hello, I'm really not sure. I've been making them for awhile but we find them very convenient and use them up before a true test can be performed. Just before Covid hit our local Community Foundation was offering grants of up to $500 for citizens to figure out ways to help each other think more about food security and I thought well I could teach about canning and cooking. Hi Janice, It's the same story here, in fact we garden in three boxes and most of what we grow there we eat fresh but we have a couple of large market gardens in our area and access by car(3 hour drive) to an area where we can buy fresh fruit and vegetables quite reasonably so the small canner works great for us. Hi, I'm sorry I missed these questions earlier. I have had great success having them up to two years. I think most people would recommend one year but I was taught to "make hay when the sun shines" so some years when there is an abundance of tomatoes I can all I can get my hands on. Other years they may not produce as much and then you fall back on your storage. Cheers, Colleen
Hello Jeanne, After I did waterbathed the first batch of quarts in my Nesco I stopped doing it because the quarts just fill the Nesco too full. I still do pints in there but not quarts.

Also too much water I fill to the line and spraying all over the place I had to place towels. On WB you select and leave on Exhaust and set the time 40 minutes and when it lets a full amount of steam you press start again and you did not show that so mine ERR I had to start again.
@MarieLoper I was really uncomfortable using the Nesco for water bath canning because the water level is so high. So after this video I went back to using my old water bath for tomatoes.

I’ve become sensitive to grain for some reason so been experimenting with tapioca flour, coconut, flour, and almond flour, but my point is, I’ve got familiar with Cassava/tapioca/yuca which is apparently all the different forms of the same thing. I’ve been using yuca. Instead of potatoes unless were using sweet potatoes now I might be able to go back to regular big taters but I’ve gotten to really enjoy the others and I was wondering if anyone has ever tried to Can it. You can buy it fresh or frozen in Texas. I tend to get already peeled, frozen.

Help....my machine made me lock the lid. Kept flashing lid.and in the direction book it didn't say.but said when done to turn 1/8 and open. Is it because its a newer model ?
I had the same problem with the Nesco and I definitely wouldn't try quarts in it because of the amount of boiling water. Honestly I found water bath canning in the Nesco to be pretty precarious so I now have gone back to water bathing in my old canner.

@@oursilvermoments6028 finished the canning. Had water over pints, when canner cooled it was only halfway up the jars. Tons of steam through the whole process. All sealed and no siphoning. Is it normal to lose that much water?
Hello Patricia, They are just a bit more than finger tip tight because I had lots of failures going just finger tip. That said they are not cranked down if that makes sense. No I don't lock the lids for water bath processing, in fact I usually just slip a seal between the canner and the lid so that it doesn't create any pressure at all. Cheers, Colleen

So you can wrap potatoes in tinfoil and cook them in the canner, I just recently got the nesco canner. But I have the instapot max too never thought to do baked potatoes that way. Kind of like pot in pot cooking. I should have watched your video before I tried canning tomatoes 1st time in nesco I followed the ball book guide for pressure canning them and they all leaked out the top what a mess. My 1st success was canning corn. 2nd jam but I was having issues with the lid now I see why u don't seal it mine the weight kept moving to seal while I wb the jam..

Your video says that you are water bath canning for forty minutes. I believe this is an error because for raw pack water bath canning the time should be 85 minutes according to the Ball canning book and also the National home canning book.
Hello Colleen, I didn't use the ball book but rather worked with the recipe we have been using for years.the Bernardin Book, which is the Ball brand in Canada says of you are adding acidity (i always used bottled Leominster juice then you can pints 40 minutes and quartz 45.

Colleen HELP!!! Everything went well up until right after the heat up cycle and then I got the Err and beeping that didn't stop. I let it go for 2-3 minutes but the count down from 40 minutes didn't start. It was set to vent and the lid was just closed not locked. ADDED: Oh my. Just goes to show you that you (me) should ALWAYS read the instructions. I was suppose to hit the start button a 2nd time when it started venting steam. Did I miss you saying that? Any way I hit "Start" and the timer started it's count down. These tomatoes will be well and good processed! About a hour instead of 40 minutes. Hopefully I got enough water covering the jar tops. LOL That shouldn't be a problem, should it?

How long do you leave the tomatoes in the water bath? And also to be clear, you don’t lock the lid?
Is the valve still the same as canning, count down then move to air tight ?

I just started dicing my tomatoes last year that I canned and I loved it. But the quarter tomatoes are great for making bread tomatoes.

So you say to just close the lid and I didn't see you twist it closed so I assume that's ok and also should the nozzle NOT be on airtight?
Per Nesco instructions. Not me but Nesco. It says not to water bath quarts. Have you had any problems with WB quarts?

Your video says that you are water bath canning for forty minutes. I believe this is an error because for raw pack water bath canning the time should be 85 minutes according to the Ball canning book and also the National home canning book.
Hello Colleen, I didn't use the ball book but rather worked with the recipe we have been using for years.the Bernardin Book, which is the Ball brand in Canada says of you are adding acidity (i always used bottled Leominster juice then you can pints 40 minutes and quartz 45.

Colleen HELP!!! Everything went well up until right after the heat up cycle and then I got the Err and beeping that didn't stop. I let it go for 2-3 minutes but the count down from 40 minutes didn't start. It was set to vent and the lid was just closed not locked.

Oh my. Just goes to show you that you (me) should ALWAYS read the instructions. I was suppose to hit the start button a 2nd time when it started venting steam. Did I miss you saying that? Any way I hit "Start" and the timer started it's count down. These tomatoes will be well and good processed! About a hour instead of 40 minutes. Hopefully I got enough water covering the jar tops. LOL That shouldn't be a problem, should it?

We can no longer get the that brand in our area, since pandemic. :)
So many things are in short supply since the pandemic. Here in Canada we are finally starting to see canning jars and seals again but they are Bernardin, which I think is a Canadian company. Best wishes, Colleen
