    Speaking of Lehmans, invest in what they call a 'steamer juicer'. My mother bought herself, and each of us girls, the same thing, back in the 1970's and it was called a Mehu Mahai (I butchered that spelling!). Anyway, I juice black raspberries for jelly. I throw hedgerow apples in there and steam them for apple juice. The pulp that's left is thick - I run that through the Foley Food Mill for delicious applesauce. In some I put the red cinnamon candies, in some I put lemon zest. Both delicious. I took some cinnamon out of the freezer during a hot day, and ate most of it while it was half frozen. I also make delicious grape juice from our Concord grapes. The smell of those grapes steaming is a wonderful thing. Mixed with some seltzer water and it is 'grape soda'. Or just delicious grape juice.

      I live in upstate NY. I have 2 Mehu-Maijas and love them! I actually got one of them from the man who was instrumental in bringing them to the United States. He lived in the same town as I did. The other one I bought at my neighbor's auction for $5.00 because no one else knew what it was. I was so blessed!

    I would like to see you do a equipment show and tell. All the things that has made your life easier. You did say something about a tortilla press. And now you have the new creamer . Food millls or green Mills. Everything that you use how you feel about them would you get them again where to get them would you upgrade them.

    I have found, feeding my chickens the dairy soaked grains takes a generation to get used to using them. After a year, the chickens systems have adapted, egg production is up, thier chicks are hard wired to the 'dairied' feed, the meat is better tasing and textured. in addion to the soaked feed, i give a bit of clabber. Its sofun to see the long term.

      Good to know. I tried that method of soaking grain, and my chickens didn't eat it. It was just an extra thing to do, so I stopped after a few days.

    Just starting out on my own homesteading journey, and have loved you guys and your channel for years.
    But this episode was one of the best, just what I needed to see.
    Could you please do a demo of both the butter churn and the cream separator. I'm looking at getting both.

    When I add oyster shells to my chicken’s feed we get so many eggs. I also don’t feed a traditional layer ration. The oyster shells seems to give them the extra calcium they need to form those shells. I can tell the difference if I run out and it takes me a few days to restock 😂

    We preg tested our 800 head of Holsteins, plus bred heifers of about 13 to 16 months of age, at 36 to 42 days since last breeding, 96 to 102 days preg, and 186 to 192 days pregnant. We frequently enough had open animals that we had to decide to reinseminate or put on the cull list. We always did the 3rd check prior to dry treatment.

    You make me really wish I stilled lived on a farm. However I do remember the job of washing the cream separator--all those little funnel shaped things that fit together. I would go back in a heartbeat even though I am 82. So glad for you and your family and all the other homesteaders.

    Every night in the summer we sit on the porch with our feet in ice buckets😂 sounds a little ghetto but does the trick! We also keep a little kiddy pool filled up every day. For rinsing off periodically, sticking feet in, etc. ❤

      Yes, kiddie pools are great. I keep one by our rainwater collection tanks. The chickens and cats and dogs drink from it, and the dogs know, "Get in the tub' when they are muddy. I also wear a bandanna to keep wispy hair out of my face, so that is wet, so is a bandanna on my neck.

    Please post a picture of your butter churn and cream separator. Do you milk 2x a day? We also have 2 Jerseys but only milk 1x a day. 10 gallons is impressive!

    We are in E TN and the "cold" water coming from my faucet is 85 degrees! Nowhere close to COLD, lol

    My Mama made “Topfen” with the skim milk.
    You wait till the skim milk clabbers and then heat it gently on the stove stirring occasionally. When the whey separates from the solids and curds are small and firm, strain and hang till it stops dripping.
    The result is similar to a dry cottage cheese.
    We turned it into either sweet or savoury fillings or spreads.

    Josh - you poor thing! I was feeling for you suffering through the allergies! Have you tried nasal lavage? I cleaned out an old chicken tractor the other day. The bedding/manure was so dry that it was impossible not to kick up dust. I was sneezing like crazy until i rinsed my nasal passages. I know allergies are a bigger challenge, but a twice-daily nasal rinse could give you some releif.

    I got rid of my water bath canner after I got my pressure canner! I use a different lid with it though, just a large flat lid.

    It has not been a good year for us with broccoli and cauliflower. So we have started some new seeds. Raspberries have been great, green beans are coming fast and furious. Tomatoes look great just need them to start blushing. Onions and garlic are pulled and hanging.

    Would love to see the butter churn. Everything that eats at our place gets any extra milk. Have yall ever considered making silage for your cows? We were able to help our neighbor make silage for his cows and it got me to wondering if we couldnt do it on a small homestead scale for the few cows we have.

    Josh, a 100% pure combo of lemon, peppermint and lavender essential oils is really great for those allergies. I use doTerra because they are safe for internal use. Would love to chat with you about it if you want.

    You could buy a couple extra beef calves if you have extra milk. That would give you lots of beef to put in the freezer or just sell them.

    Nettle tincture for those allergies. Take a couple of schloopers of it and voila! Allergies subside or go away!

    You mentioned in this video you do 450 broiler chickens. Where do you store all those processed chickens? Do you just have 5 deep freezers just for chicken storage? I'm asking becuase my family is working towards growing/raising all our own food, and storage has always been a dilema. thank you

    Speaking of all that extra dairy for the livestock, I'd love to see you guys start raising some American Bresse chickens. I hear they do very well and make good use of the extra dairy on the homestead. =) I'm almost not sure which I should start with, the dairy animals of these wonderful chicken.

      I have raised bresse chickens. In my opinion they were not good if you compare them to a cornish cross for meat. As far as layers go, they lay about 4 medium eggs a week. We culled the roosters and the meat was very greasy, not as much meat as you would get from a cornish cross. Personally I didnt like the lack of personality in the hens either. The roosters were horrible and mean too. I have 4 bresse hens left after my last hatch. I wont be hatching any of their eggs. I like layers that have personality and my bresse dont have any. They stay together even though they were raised with some different breeds and they are skiddish and not friendly at all.

    We're buying 5 acres! I have goats for milk and meat.. but thinking of going to maybe sheep??? Have yal ever tried sheeps milk and cheese and butter? Just trying to figure out what would be our best fit because it's just me and my husband. Or kids are all grown

      We’ve had goats and sheep. We never made butter, but sheep’s milk is SO GOOD!!!! We are in the south though so the dairy breeds of wool just make them miserable. We milked our hair sheep too, but the amount of milk is low and the lactation is t as long. So, for our location we do goats for dairy. I will say if you want the thick creamy milk that’s similar to sheep, then a Nigerian goat is what I would do. We have 4 kids, so we need high production and love our Nubian/lamancha girls. Our lamancha/Nigerian girl is great, just low amount of milk.
      If it were just my husband and I, I would go with Nigerians. Even crosses. Just because the location of our sheep wasn’t very long.

    I wish I could grow brassicas. I have failed at every attempt. Either the bugs get them or they bolt. I've harvested about 6 cabbages in 45 years of gardening.

    I love the pantry chat! We don't do our own dairy yet, but we will. My husband grew up on a dairy farm, I grew up surrounded by them (I had horses, still do), so we aren't 'Google' farmers. We have/do raise beef, pork, poultry. We need more barn, too!

    The 2 different brands of cream separators, Vevor and Slavic Beauty, are among the most pooular. Not american made, but the slavic beauty is made in Ukraine, which is better than China in my opinion. Vevor is a Chinese company.

      Use it in baked goods and bread instead of milk. Or put it in the blender with fruit for smoothies!

      We do freeze dry milk. The cream won't last as long due to the high fat content.

    I am not sure if someone mentioned this already but make sure you do not feed your skim milk that has been through a cream separator to a ruminant animal. The separator adds air to the skim milk and can cause bloat.
