Idea for future video(s) for you - instead of cooking just one thing, have some episodes with multiple items that can be done in a single cook with charcoal or with some wood chunks based on using various accessories and heights on the divide and conquer. For example start with some ribs and then add hasselback potatoes and a side of grilled zucchini as the cook rolls along. I have a Big Joe 3 and love trying to get creative with pairings or trios of stuff. Love the channel - excellent format and information all around. Keep up the great work!
Thank you for the video. I own the summit kamado for a month now and love this grill. I have a OnlyFire charcoal basket, very similar to the SNS, but costs only 50 Euro. I use it mainly for creating a sear and indirect zones and it works very well, it also helps with charcoal management and cleaning. For smoking, I don't need any other accessories, I use the original deflector plate with excellent results. It took some experiments to find how to build a fire for low and slow, the snake method works best, with wood chunks on top of the charcoal. Lasts for many hours with stable temperatures and good smoke.

Good summary overall, I've got a few great KJ Big Joe half-grates and use them frequently. You're wrong about the SnS, though, it's a great accessory and airflow is fine. Maybe your dirty smoke concerns related more to a learning curve between the SUmmit and what you're used to on the KJ. It's like me complaining about the crappy temperate adjustment issues on a ceramic kamado. ;)
Ive been using the KJ Classic half moon ceramic deflectors on top of the WSK metal deflector (fits perfectly just inside the WSK deflector holes). Then use the Kick Ash 18” Drip Pan on top of that (the little “feet” make an air gap for insulation and air flow). It acts as a “double” indirect setup that lets me burn a little hotter for better convective flow without the risk of overcooking the bottom of my protein. I can still maintain sub 250 temps at grate level no problem (without water) and it doesn’t block any of the airflow around the edges. I’m loving the Karbon Griddle on my WSK. Thanks for that sweet tip 🙌. Can’t wait to see what else you come up with on the WSK!
You are correct Weber does not offer a rottesiae, but there is a third party one from Europe. I have also seen the small slow roller fitted into the Weber kamado but foil was used to block the air escaping from the bottom sides.
The third party one “Spit on Fire” fits like a glove. Motor isn’t as beefy as the Weber motor, though the Weber motor mounts fine on the Spit on Fire ring with some light prying the first time. Careful when ordering, they ship to US with Eu plug by default, and a universal plug adapter doesn’t work for some reason.
I did a divide and conquer using Joe parts some time ago and put it on my channel. I didn’t use a rack, but bought different size Joe parts. I also chopped through a Summit deflector plate to use as split deflectors- put it on my channel. Good to see that carbon steel fits as I intend to get one for my Summit, they are very nice. Keep up the good work. I have no idea why Weber don’t make their own accessories for the Summit, they are missing a whole revenue stream. I’m giving money to Kamado Joe for that Carbon Steel.
Joe Classic half moons fit the Summit upper fire grate, and Big Joe half moons fit the cooking grate. The two sizes can be mixed for two level cooking. This setup works well: 2 Big Joe cast iron half moons on top 2 Classic Joe half moons in middle Fire on the bottom You can alternate grate and griddle on bottom level for heat deflection.
You can fit the kamado joe soapstone, deflectors, etc... directly without the divide and conquer piece, try it, you'll be amazed how perfectly it fits. For the top layer you'll need big joe products, for the lower parts (in my case deflector) you'll need the standard joe version.
Great work, thank you! If this had come out 3 years ago, I probably would have gotten the WSK instead of my Classic Joe 3. No regrets (since I haven't had to move the KJ anywhere), but this is fantastic info to have out there!

I’m rockin’ the [classic slo-roller] in my E-6 w/double + indirect, the smaller size slo-roller curbs the charcoal capacity a bit. I got 5 hours on some beef plate ribs, and for S&Gs let ‘er roll, the burn lasted a decent 12 hrs w/me playing w/temp control, all below 300°F. My indirect implementation consists of sequential metal deflectors separated by various trivet(ish) dividers. I concur w/your thoughts multi indirect allows for more flow through the cook-chamber while helping to keep the temps in check and simultaneously reducing the radiant quotient.
Love your videos! I have grill grates - just ok from a griddle experience on the summit charcoal. Would you go with the kamado griddle accessory or stand alone gas griddle?
depends, sometimes they are about the same price... so you have to look at space, portability and ease of temp control... a live fire is harder to keep in a happy place opening and closing the dome than a gas flat top
Is there only one size joetisseri also in the reading I've done to make it fit the WSK there needs to be some modifications like grinding, your video looked like it wasn't necessary please advise
The way the sloroller is supposed to work is by completely sealing of the bottoms to create the pressure needed for the hyperbolic smoke chamber to work … if it’s sitting on a grate with some air passing through and some going around the outside it’s just a piece of metal in the grill
As a summit kamado owner, this was super helpful! Did you try the dojo and rotisserie with a fire on? Notice excessive smoke leaking? The lack of rotisserie is frustrating but the joetisserie seems like a good substitute!
Thanks for the video that answers the burning question, does the Joetisserie fit? Also, if you're selling that SnS accessorie, how do I make an offer? I have an original SnS version I, which admittedly is a bit too tall for the Weber, but I use it anyway. I use it all the time, it's great for doing steaks or chicken. I only revert to the diffuser setup when smoking something for a long time, like a pork shoulder.
Thanks for the video, very helpful. Several WSK owners suggest cutting/grinding the Joetisserie frame to get it fit flush in the back. You're saying that's not needed since it creates a seal on the inside?

Great video…..well I finally bit the KJ BJ3 bullet this week. And I told my wife it was your and Rum and Cooks fault. Now it’s like a new car, I don’t want to get it dirty! I do have a question, is there any reason to season this or should I just tear loose and start cooking? Looking forward to alon relationship with this grill. I’ve used a Vision for the last 12 years
I must of missed this video or forgot that you did this comparisons already as I been living in a hotel room since my house burnt in 2021. I do have the KJ rotessiar and it works great on the large Green Egg for the 2 years I had it before the fire. I did figure out how to do a double indirect with my final grates only an inch above the opening that allows for better cooking and room for larger meats. This is a major find that you figured out that really improves the flavor and uniformity of the cook. @@SmokingDadBBQ
Kickash makes one specifically for weber, I bought one and love it. I also bought a charcoal divider so you can divide charcoal grate for more or less coals, I havnt experimented with it yet, I just got the e6 a couple weeks ago.

I agree, My Spit on Fire fits like a glove. I've had it for a year and works great. Mine did come with the North American Plug.

It can be made to work if you’re comfortable gazinta-ing (altering) things w/a Dremel.

Spit on fire makes one specifically for summit kamado . You don’t have to use the big Joe and hope it fits.

Congrats on your new grill! Optional a 20-30 minute break-in burn to remove any chemicals or just let your fire burn longer before cooking - enjoy!
Is it worth while to buy a carbon steel griddle for a classic 3, or is the cooking area just to small?
I would buy the Oklahoma Joes 18” griddle which fits the classic the same for 1/3 the price
