Not to be pedantic but Balon in the books is actually the second of the five Kings to bite the dust. It goes Renly, Balon, Robb, Joffrey and (presumably eventually) Stannis. It‘s only in the show where Balon survives longer than anyone else because the writers "kind of forgot" about the Ironborn storyline for like two seasons there.
I think that was because they had to bring Euron for that and they weren't going to have use for him for 2 seasons lol

I feel like Balon’s decision is also kinda the result of Robb’s poor diplomacy - the letter was not worded as an address to an equal, and I think it would’ve been beneficial if it had been worded more carefully.
Totally, just a simple 'now is the time for the ironborn to take back their independence' or like any nod to their culture would have been enough, but Robb words it as giving , which makes it not an acceptable offer. Half the iron islands would lose their minds about the old way and rebel against balon if he let them GIVE him the iron islands.

The Starks did a shit job of educating their children about the history of their family vs. other ruling families. Sansa thinks the Lannisters are her friends. Robb thinks giving the Greyjoy heir back to them for free is a good idea. Imagine how the story would have gone better for them if Ned said at any point, "Hey, even if Joffrey is the greatest king in the history of Westeros, his family aren't our friends, and here's why." "Hey, even if Theon is the best friend you could ever have, closer than a brother, his family can't be trusted and here's why."
