- Today, I will show you how to make "Steamed Pork Buns" in Japanese style.
We call it "Nikuman" in Japanese, and very popular snack for every generations.
There is a very famous "Nikuman" shop in Osaka loved by people. I like to recreate it at home! I tried so many times to make the recipe and this is it!
<dough>makes 8 nikuman
150g Cake flour
50g bread flour
1 tablespoon sugar
1/2 teaspoon salt
1 teaspoon instant dry yeast
1 teaspoon baking powder
110~120ml (1/2cup) luke warm water
1 tablespoon lard or shortning
<Pork filling>
150g( 1/3 pound )ground pork
1/3 teaspoon salt
1 teaspoon chicken soup powder
2 teaspoons sake
2 teaspoons soy sauce
2 teaspoons oyster sauce
1 teaspoon ginger juice
1 teaspoon sugar
1 teaspoon potato starch
1 medium onion( 200g ≒7oz)

I tried your recipe and it really tastes like 551 Horai. I did have difficulty with the dough. It was a little small to cover all the filling entirely. Any tips on how I can make the filling not burst out when I’m folding the pleats? Thanks. Great yummy recipe!
I made it with my dad a week ago and we used cow meat instead of pork since pork is against my religion but dang it tastes good

I followed the recipe exactly as it said and they were the best pork buns ever I just love them so much now I make them almost every week sometimes twice a week ❤😄😄

when I traveled to Kyoto and Osaka for the first time the 551 Horai buns were always one of my favorite things to eat. Now I will try to make them at home ☺

the dough did taste a bit dry tho, do you maybe know what I might did wrong?
I made this but substituted the filling with mutton curry. It was so fluffy!!

Made these today, they turned out lovely! I did a few different fillings (curry, pork, white anko.. Lots of different types) but used your dough for all of them and they turned out really nice. I swear everything you make looks so yummy! As there was no pork in my local shop today I made buns like these but with a super hot curry prawn filling instead (chopped prawn, onion, cabbage ghost pepper, ginger, and curry paste). Also swapped out lard in the dough for sesame oil to give a nutty flavour. This has become my go to kitchen channel when I need new ideas!

I made these tonight. WOW!!! They are perfect! So different in texture from the baozi. Much softer and more fluffy. And i love the filling! I used chicken and miso. Chinese recipes call for the filling to be mixed A LOT. But i followed your method, and the filling was soft and pleasant texture, with the onions too. Thank you for your super recipe! I will make them again for sure, YUM! Delicious!

So glad i've found your channel. I've made this Nikuman and really2 happy with the result. It's fluffy and so delicious. However, i'm still confused about how to weighing shortening in tblsp as it in solid form. May i know the weight in gram?
1 tbs shortening ≒ 10g

I know I can change out the pork for beef or even chicken but could I change out lard for suet.
If it is flavorless, you can use instead.

How long did you cook them?
wonderful channel and i like your style. Unfortunately i just learned that lectin from starch like flour is unhealthy and causes leaky guts and does not feed your microbiome. So that we should avoid all foods made with flour, cereals and grains (including pasta, bread, pastry, dough, pizza). In fact i wish it was not true. Maybe it's not true and it's caused by pesticide contained in the wheat field so it's important to use only organic / bio flour.
