The Daikokuten servant you roll in the gacha is 100% male. You never see him because he's too lazy to ever show up when you summon him. Every time you try, his maids just show up and go "sorry, Daikokuten couldn't make it this time, but he did send us to help you". So he's not a genderbend by any stretch. Just off-screen somewhere.

Artoria, in Fate's setting, was *always* a female. Same with most of them. Da Vinci is a female because he gave himself magical plastic surgery, post-summoning, and is an exception with an actual purpose. These aren't deep reasons, or Doylist reasons. But internally to the setting, characters don't suddenly change their sex after death. And then there's Jacques de Molay and Van Gogh. Who are because of Foreigner bullshit.

Musashi isn't actually Musashi. Etc. But a man being summoned as a female? Weird. There *should* be a meaningful reason that the Servant themselves can explain. On the other hand, there's Jacques de Molay, both of them. Who have "poor" Watsonian logic (a space alien did it), but good Doylist ones (unlike Van Gogh, being used to the male design beforehand ups the creepy factor significantly). Similarly, Van Gogh is female for a meaningful Doylist reason, it's just not executed as effectively. (Admittedly, Paul Bunyan is also the same case of weirdness, but let's accept that Riyo is some sort of monstrous space alien.)
So there are three classes of genderbent characters from what I can tell: The Incorrect Information, who are figures who were stretched to fit the idea that we just misinterpreted their identities. This one tends to have the ones that are the biggest stretches imo. Artoria, Ushi, Jing Ke, Pollux, etc. The Actual Genderbends, who directly change gender in-story despite being in-universe the other. This includes Pseudo-Servants who would be possessing a character of a different gender. Red Hare, Van Gogh, Ganesha, Quetz, Foreigner de Molay, etc. The Joke characters, who are genderbent specifically because Fate/ is making fun of itself about how often its done so. Okita and Bunyan are the iconics of this group.
I might want to point out that besides some joke characters who Type/Moon never addresses why they are female, most gender ends, especially serious story ones, have excuses for them. Be it as simple as “history was wrong/falsified”, or they are divinities who live by body jumping and the god just chose that vessel (Quetz), or they were forcibly genderswapped (future servant), etc. Yeah, the excuses may be flimsy but that does not mean Nemo is incorrect.
Wukong (Monkey King) is actually the protagonist of journey to the west. Sanzang, while being the most important person, is merely a plot device. I mean... the first couple chapter(?) of the story revolves around Wukong alone...
Caenis is, funnily enough, a reverse genderbent, Caenis was born female, one so beautiful that Poseidon raped her. He then concede her as a sort of compensation and she asked for becoming a male with an impregnable body to never have to go through that again and changed her name to Caenus. Because this is Caenis and not Caenus, she is summoned as a woman but with a similar constitution to her male counterpart.

The only reason for Caenis having Caeneus’ personality, from a lore standpoint, is that when Caeneus died, Poseidon’s gift was undone, and so he returned to being Caenis before transforming into a golden bird and flying away. From a game perspective, it’s just an excuse to have Caeneus be female without bending the rules too much.

The gender thing has to do with in lore, there is always some reason as to why the gender is different. Whether that reason is good or makes sense is an entirely different story. The Irl reason is obviously because history and mythology are heavily on the male side, so they need to even things out a bit. Caenis/Caenus is the sole exception that was gender bent in their own story.

Nemo NP1 can also be outdamaged when not on a water field by a 3*. Mandricardo is an excellent servant

The gender thing has to do with in lore, there is always some reason as to why the gender is different. Whether that reason is good or makes sense is an entirely different story.
The Irl reason is obviously because history and mythology are heavily on the male side, so they need to even things out a bit.
Caenis/Caenus is the sole exception that was gender bent in their own story.
