After my father passed, my mother was kind of left hanging. She had to work longer hours and more days to make ends meet. As such, we had this recipe for dinner fairly often. It wasn't always peppers. Sometimes it was asparagus, squash, etc. Later, after my mom learned to cope with the missing income, things got better. When I say better, I mean we ate what we had available to us. There was a period of time when I didn't know what was on the table. So many times I looked at dinner and had to ask what it was; breast of lamb, stuffed squid, rabbit...whatever she got her hands on, that's what we had for dinner. As difficult as it was without dad around, it taught me and my sister both what perseverance and strength really were, and how to appreciate the things we would acquire later in life...

growing up in Elmwood Park ILL. 50s-60s, at Johnnies Beef Stand they offered pepper and egg sandwiches on Fridays, being Catholic we couldn't eat meat on Fridays. they would dice their green peppers, mix it in the eggs and then scramble the eggs.

I reviewed numerous pepper and egg sandwich recipes to recreate what my mom used to make when I was a kid. Your recipe nailed it! Tasted like nostalgia in its finest form! aka took a bite... chewed... aaaagh, so gooood, this is it! :)) 👏👏👏👏🥰

@@godfatherbbqitalian I quartered a large zucchini, cut the slices pretty thin, then sauteed them like you did the peppers and onions, took them out, added eggs to the pan, then back in and voila! I let the zucchini cook until soft and some partially browned. SO good. :))
There’s a spot on east Colfax called Chicago’s ..got excited when I seen “peppers & eggs” on menu ..but it was just 2 over hard eggs soggy peppers on hogtie ..I coulda done that at home …need to find a place in Denver that makes em
10 minutes after 12 noon here. I’m going hunting in the fridge for a green pepper. I don’t know about the provolone cheese , might be a quick trip to the IGA. I’ll let you know how it turns out. If l’m half as happy as Tina looks l’ll be happy too. Robert Down under
Well l made it for dinner tonight. I think l failed,tasted ok but had to do some substitutions as the supermarket didn’t have provolone so l used jarlsberg slices and no Italian sweet peppers so l used green capsicum. Could have salt and peppered it a bit more. Used mozzarella cheese on top. Will do some forward planning next time and do a bit of shopping out of town in a bigger centre. Isn’t a cubanelle a Cuban pepper ? 🧐 I’ve been growing some Carmen peppers and I guess those could work as well for frying…
Yes, technically it is, but very common and Italian cooking. And carmen peppers will absolutely work for frying as well.
