Guess Dave didn't see the movie. And that is kind of an odd name for a restaurant, especially a pizza joint. That being said, I just don't get his disdain for Neapolitan
style pies, I think he's painted himself into a really stupid corner with his rants about it.

you can do crisp pizza in a wood fired, it just needs to run at a lower temp.. the idea of it is to cook quick to retain moisture instead of drying out

I went to Frankie's in Worcester MA. 2.5 hr wait. Needless to say I had chili dogs at Coney Island downtown. They were delicious.

It’s an on going joke because he started this as a challenge where he ate pizza everyday for a week and decided to review them. He really did take one bite for about a week and realized it’s not fair. So he kept the slogan but actually reviews it how he should.
i was thinking it would be a 7.2 at first, glad he corrected his mistake at the end.
I recommended this to him in the comment section a few videos back. He scored it higher than I thought he would. Good for Lamp
pretty bad score considering all the high 7's he was giving the football pizzas in FLA. But this is back to his normal scale.

Lamp is probably the best pizza I have ever had period. The owner is a nut when it comes to quality and care of his pizza.

That place is in a very very high end of Scottsdale. Mostly multi million dollar homes in that hood. I'd like to see more blue collar pizza places being reviewed in his current visit to the Phoenix area.
Typical North Snottsdale trendy restaurant wait. If there is no wait, they won't go there. When I moved to the area, tried another place in regular Snottsdale that opened as a snooty pizza and Italian restaurant. The pizza was Naples style, but I was not impressed. This native NYer had magnitudes better in Brooklyn!

Best way to do it. Treat everyone the same. Plus; those places aren't making it take long because lack of employees or being slow. It's literally production limits of the wood fired ovens. Only so much can be done. Each pizza needs to be set near the fire and rotated then pulled. Usually one or two at a time. They cook fast but they also can't just be stacked in their 5 at a time like lots of ovens.
He said he just called and sat in car 90 minutes..he was being stealth 😂

The first time I had a wood fired pizza I was working in France. I didn't expect much, however the 4 cheese wood fired pizza was fantastic. I like the smoky flavor.
There use to be a few Italian eateries in Baltimore that were 4 generation owned places. They crisped the crust before adding the sauce and toppings.
Where I live now, there are no good pizza or sub shops. Atleast they majority haven't gone over to conveyor ovens.
Floridinos in Chandler AZ. Solid pie.
Floridinos is amazing. Florigenos in Gilbert is pretty much the same.

Go to Cider Corp in Mesa!!!! Amazing pies. We drive 45 mins from Phoenix just for the pizza. The cider is awesome too.

That is a monster score for a pie like that for Dave. Was expecting a 6.8
It got a 7.2
exactly.....in about a thousand other vids Dave immediately calls it a Neapolitan and says " we're starting at a 6.8 baseline"......and MAYBE it gets to a 7.1. He called it a 7.6 because he feels duped for sitting in the parking lot for 2 hours for this pie
Honestly, if you like this style and understand Daves scoring with the different makesnof pizza, then this would be in the high 8s, if its your style of Pizza

Wood fired typically uses a "lean" dough, no sugar or evoo because the oven is 900 degrees. The result is a puffy crust because there is nothing to "shorten" it...

Pizza Mart on 1329 E. Main Street in Mesa is a very popular pizza resturaunt that has been around awhile.
Anything 'not Dave's style' should be a 6.9 at best.
That Pizza sure does look good. The Fry's Food and Drug south Tom Darlington and Carefree Highway has great brick oven pizzas as well has The Bashas on Ellsworth and McKellips. Also Dave you should try Barro's Pizza , and Amazing Jakes pizza in Mesa near Gilbert and Baseline. Unfortunately Olympus Pizza has closed down.
DAVE....you are 5 minutes down the street from Lorenzo's on PINNACLE PEAK AND SCOTTSDALE RD. Amazing Pizza...hope you check it out !!

You can get a good crisp out of any type of pizza oven.
It all comes down to the dough combinations, strong bakers flour will add that crisp to any dough!
Then just cook it right!
At this point I don’t bother watching the ones that have a floppy pizza for the thumbnail
Dave...it's not the oven....it the flour type. They most likely use a 00 and that flour usually does not get super crispy.
I dont think so , it cooks in less than 90 sec so the dough retains some moisture so it is not crispy as other lower temp ovens which cook for 10 mins
@@Ibra.shalaby bro, I'm a master pizza chef...trust me, it's the flour and how the dough is made. if I take a high gluten flour and cook it for 90 seconds, it will still be floppy as a 00 flour. I'm not gonna get in the science of hydration with you cause I'm not teaching a class on youtube. LOL

QUESTION? Can’t they do what they call top it ? Where they lift the pizza up close to the top of the oven ? It browns the cheese makes it look and taste better.
2 hour wait for a pie that takes a 2 minutes to cook. Make it make sense.
Wood fired ovens take constant maintenance to keep temp and keep producing correctly. They take up lots of space. And you can only do one pie; maybe two pies at a time. Each one needs to be by the fire; rotated; then removed.
Most pizza oven styles have much higher production capabilities. Wood fired pizza usually sells well and is delicious. But you aren't going to pump out pizzas at a high rate; no matter what you do.
Also; the surface the pizza cooks on needs to regain heat after a pizza is removed. So there usually is a little time between each pie.

Incorrect, woodfired pizza can absolutely be crispy and doesn't have to be Neopalitan style. Coal ovens basically same thing. Depends on the flour used. I use pizzaria for mine.
He really needs different scales for different styles. Probably too late in the game for that, but that’s really what he does. He could have a clear bar-pie meter, etc. he could rate the styles and adjust for them. Would be interesting to see someone like go back and do an adjusted scale of his pizza reviews
this place is pretty legit. Been there a few times and from a flavor standpoint its pretty unreal. Yeah you wont get the crisp, but dam its a 10 on taste. But wood-fired is not NY style, so this should equate to an 8.1 as Dave has an auto -.5 for wood-fired. Also, there are some menu items at this place that are really really good.
How this man can rate a pizza a 7.6 and then 17 seconds later say 7.2 is beyond me. It’s like the chess player who can LITERALLY only play chess. Can’t tie his shoes, can’t drive a car… and you know what? He doesn’t care - because the passion for chess is why he’s on this planet. Dave was born to bite and that’s his chess.
