Unrelated, but I scored some chorizo on a manager's special about a month ago, so I thought I would make some classic Velveeta / Ro*Tel queso and add it in. The chorizo spices overpowered everything, and I didn't like it at all. Then I had an idea. I added a brick of cream cheese to it and re-warmed it. Amazing! All it needed was the dairy from the cream cheese to subdue the chorizo spice a little (it was very cumin-y).
This just made my day. These cooks don't alwasy turn out how we would like but to be able to take it, adjust and have it come out great is something that not many can do. Kudos to you!
As a mexican, I would definitely try his take on mexican food as long as he takes tequila shots with me otherwise I will be offended due to cultural appropriation 😂
@@FOGOcharcoal Kind of like the shotgun shells,; crab meat, cream cheese, some bbq run and mix together. Slice the jalapeno in half lengthwise, some seeded and deveined and some not for some heat. Stuff the jalapeno half, wrap in bacon and grill on the BGE until the bacon is crispy. You always make something interesting, things I have not thought of. The shotgun shells will definitely be something I make for the next party. I still want to make the cuban with brisket. That is high on my list too. Oh yeah, I finally got the string on the Fogo bag to work. Hopefully I can do it again on the next bag. lol

That's the beauty of the internet, when you're bored of grilling steaks something like this pops up. Can't wait to try them out

Look great. When you put the bacon wrapped shells on the grill do you flip them at all?
I do not flip them at all. If you see the bacon starting to get too dark, go ahead and flip but I have never had to.
Would you add wood chips with this? Or is the charcoal enough?
Personally, I wood not (see what I did there LOL) BUT...if you'd like a smokier flavor, by all means, add away!

Looks really good. I have used crab meat in jalapeno poppers before. That might be a good try for these shotgun shells.

Save the can juices, add taco seasoning, reduce reduce, reduce, then cool and add to the mix before stuffing. 😁
