My Mama, who's also an Ilocana, doesn't use chopping board. And her Pakbet and Igado is sooo good! 😉

Gabì(taro) or squash …camote madaling madurog…pero you have to separately cook them then add at the last sec kasi the remaining heat continuously tenderizes the soft greens’ textures ( I top it with grilled tilapia or deep fried bangus or galonggong; pork chops cooked crisped,I incorporate but not to be garnished or topped 😂( Pangasinan export quality digo or anchovies fish sauce is naimas ngarud y is the best so far
IMO lang pô y btw y this is served with super fancy aromatic Thailand white rice (always new crop as branded mixed with brown organic rice(organic brown rice must be soaked for 2 hours before cooking with white Thai rice

What an elitist idea to say the vegetables are "over cooked". It's like saying, Japanese liked their sushi raw. ---- just sayin'. 🤭

As an Ilocano for 40 years, your "Authentic" Igado is an insult to our recipe! Potatoes and Gabi? Shame for ruining the dish.
