Homemade Vegan Granola Bars: A Quick and Easy Snack

  • This delicious treat is super easy, a great snack or something you can add to a packed lunch. It also happens to have lots of fiber and is gluten free! You are easily able to switch up flavours in these versatile granola bars and be creative! I’d love to hear what other flavour combinations you try…
    By the way, did you notice I said wheat bran when I should have said oat bran? Lol!
    Ingredients:
    2 ¼ cups rolled oats or quick oats
    ¾ cup oat bran
    1 cup shredded coconut
    1 cup chocolate chips
    ½ cup raisins
    ½ cup cranberries
    ¼ cup vegan butter, melted
    1 can coconut condensed milk (250 ml)
    Instructions:
    Preheat oven 325°F
    Grease or line with parchment a 13" x 9" pan and set aside
    .
    In large bowl, add all ingredients and mix until well combined.
    Empty granola bar mix into the baking pan. Press very firmly into the pan.
    Bake for 25-30 min (until golden).
    Allow this to cool in fridge before cutting into small bars.
    Suggestion: You can add other ingredients into your dry mix such as wheat germ, ground flax seeds, chia seeds etc. As long as this mixture combined with the oats adds to 3 cups, you should be fine.
    You can also use other dried fruit eg. chopped dried mango, dried pineapple, dried apple, etc.
