⬇️⬇️English recipe follows⬇️⬇️ 鹵水炸豆腐 材料: 硬豆腐5磚 鹵水汁1支 黑椒1湯匙 花椒1湯匙 冰糖1大粒 處理: 1. 硬豆腐,清水沖洗乾淨,用廚紙索乾。 2. 豆腐,每磚1開2。 3. 黑椒及花椒,放隔篩內,清水沖洗乾淨。 烹調: 1. 花椒及黑椒,放煲內,加入鹵水汁、1支清水及冰糖,大火煲滾。 2. 大火在另一個煲內,燒熱油250毫升,轉中火,放豆腐炸至兩面金黃色,轉最慢火,夾上碟。 3. 轉中火,繼續炸完所有豆腐。 4. 煲內餘下的油,放一邊攤凍。 5. 鹵水汁已煲滾,轉最慢火,加入豆腐,浸5分鐘。 6. 豆腐已浸好,夾上碟。 7. 豆腐,放砧板上,切一片片,放好在碟上。 8. 完成,可享用。 Deepfrying tofu in Chinese marinade: Ingredients: Hard tofu 5 cubes Chinese marinade 1 bottle Black pepper 1 tbsp Sichuan peppercorn 1 tbsp Rock sugar 1 big cube Preparation: 1. Hard tofu, rinse with tap water. Dry with kitchen towels. 2. Tofu, divide each cube into 2 pieces. 3. Black pepper and Sichuan peppercorn, put into a filter, rinse thoroughly. Steps: 1. Sichuan peppercorn and black pepper, put into pot. Add in Chinese marinade with a bottle of tap water and rock sugar. Heat up at high flame. 2. Heat up 250ml of oil at high flame in another pot on the other side. Turn to medium flame. Deep fry the tofu until both sides have been turned into golden yellow. Turn to low flame. Put on plate. 3. Turn to medium flame, continue to deep fry all the tofu. 4. The remaining oil in pot, put aside and wait for cooling down. 5. Chinese marinade has been boiled up, turn to low flame. Add in tofu, soak for 5 minutes. 6. Tofu has been soaked well, put on plate. 7. Tofu, put on chopping board. Cut slice by slice. Put on plate. 8. Complete. Serve.

鹵水炸豆腐
材料:
硬豆腐5磚
鹵水汁1支
黑椒1湯匙
花椒1湯匙
冰糖1大粒
處理:
1. 硬豆腐,清水沖洗乾淨,用廚紙索乾。
2. 豆腐,每磚1開2。
3. 黑椒及花椒,放隔篩內,清水沖洗乾淨。
烹調:
1. 花椒及黑椒,放煲內,加入鹵水汁、1支清水及冰糖,大火煲滾。
2. 大火在另一個煲內,燒熱油250毫升,轉中火,放豆腐炸至兩面金黃色,轉最慢火,夾上碟。
3. 轉中火,繼續炸完所有豆腐。
4. 煲內餘下的油,放一邊攤凍。
5. 鹵水汁已煲滾,轉最慢火,加入豆腐,浸5分鐘。
6. 豆腐已浸好,夾上碟。
7. 豆腐,放砧板上,切一片片,放好在碟上。
8. 完成,可享用。
